Bit finicky at times, but it's dumb that in 2.0 you can swipe both left and right for a new face. You couldn't add another action there originally, Google?

One issue I had that may help you is the launcher interface. This swipe both left or right for a new watch face on AW 2.0 is ridiculous. So I found this launcher that lets you swipe from the right like you used to do and also hide/favorite apps, etc.
Battery life is hit or miss for me. Def doesn't get me through two days like it used to.
Absolutely slower to do anything than it used to be, but hasn't gotten that bad for me yet anyways.
One thing I LOVE is that they FINALLY fixed the freaking music player. That was always a pain in the ass on the first version and you had to find a hack around depending on what player you used generally. Now it just works.

However, in the Settings -> Apps it is not showing up as possibility to use as default launcher, there is only the clumsy way of launching it by swiping left from the right, which usually shows the first tile anyway.
There is also no possibility to change the default actions of the swipes on the watch face, so I can't make it so that swiping up from the bottom would launch this instead of the OneUI launcher.

Launcher for Wear OS has an option to toggle off swiping to open it's app drawer. You can also hide unwanted apps. So when the main app opens (which you would remap your button to), then your favorites would show up.
This app is also nice in that if you install a bad app you can long press it, and uninstall it without having to dig into your watches settings, or in the Play app.

Doesn't need to connect to a screen-tap. Can actually replace the "swipe from right" screen that has been Google Fit since the latest WearOS update, which is fine with me because I already had a button on the main screen to open Google Fit.
I don't think you can uninstall it. You can disable it as you mentioned, which will prevent it from running. With the custom launcher I use, I can hide apps to prevent them from appearing in the app list, but you can't actually uninstall an app that is built into the OS.
There's always been a few third-party launchers. Some don't work with wear 2.0 or never updated. I use this and recommend it highly.

Here's another good option that can mimic the Wear 2.0 app list layout (most negative reviews are people on Wear 1.5 trying to get the app and it isn't compatible with 1.5).
