there's a pixel theme for lg g6 on the play store right now and i'd bet the same guy will port it to the v30
if it doesn't have a theme engine, you could always use something like substratum
I thought I would include the steps that I took to get this result:
I downloaded the Pixel UX Theme for LG G6. I understand it costs money but if you get Google Play Rewards then you can get it for free after like 15 surveys.
I downloaded Nova Launcher and Nova Launch Prime (optional). I selected the light theme, the swipe up app drawer, then in the settings you go to > Desktop > Search Bar Style > Then you select the pill one right above bar color and the rainbow G under Logo syle \n\n Then go back one page, mark 'Persistent Search Bar' to on
I installed the Nova Google Companion for the stock android style Google Now cards that you cannot see in the screen shot
Lastly, I installed a System UI tuner app and through the console on my computer, gave it access to remove some of the icons on the search bar, and I removed the NFC icon as I keep it on

Install a theme from playstore ( https://play.google.com/store/apps/details?id=com.lge.theme.pixel.ui ) I use this one and use the home and app launcher, from settings you can change it! Or get nova launcher (nova prime version is paid and you can get notifications badges and lots of gesture)

Not having ever used Substratum, I think it can theme a bit more, but LG already has a theming engine that will do that.

I don't think either will allow you to change the fundamentals of things, though. Just a color/icon kind of thing.
But Substratum can also work for certain apps as well, like changing the background of some Google apps to black.

Not sure if they need to be updated for the V30 though.
Nova all the way. Go for the beta if you want to be able to do the side swipe to Google now. Can you set app draw to open on swipe up like pixel launcher.

I'll have to give this a proper listen later, but skimming through the video, I'm liking the improvements to their UI since I last used a V20. Gif capture, scroll capture, crop capture, adjustable screen color (RGB slider too), the Game Tuner thing...Just need to load up a theme like this one and I'll be set.
I got my G6 yesterday! here's what i did
Change Settings to List view
Enable Developer Options
In developer options > Drawing section > change the animations to .5x. This makes animations a lot faster. i'd prefer .7x...but i'll settle for .5
Under Display > Display Size > I dropped the size of the icons to the smallest to make better use of the space
Under Display > Home Touch buttons > I added the slide notification button so i don't have to reach the top of the screen
Under Apps > I disabled whatever system apps i could > Calendar; Duo; Evernote; Facebook app manager; Play movies and tv; Play music; LG friends manager; LG health; Music. I don't use any of these, but you might feel differently.

Google Now launcher is being phased out so this setup works for me :) I like being able to access GNow by sliding left
I moved my quick settings around to work for me
I made sure double tap to wake/sleep is enabled. This makes it easier to wake the phone when on a desk.
I made Google Photos my default photo app.
I set the resolution for front and rear cameras to the max (4:3 aspect ratio)
I changed my default keyboard and set a comfortable height for the keys
That's all i can think of :) You can probably tell I prefer a stock android experience :D
Same boat as you, just switched from a 6P to a G6. The LG default theme is pretty bad.
Use the official Google Now launcher from the play store, or Nova Launcher. I prefer the Google Now one. You can also use the official Google Contacts App, Phone App, Messenger App, Clock App, etc, and change the defaults. You'll also want to use the Google Wallpapers app to get those nice Nexus/Pixel backgrounds.
Then use Pixel UX Theme for LG G6 and apply it in your theme settings - https://play.google.com/store/apps/details?id=com.lge.theme.pixel.ui which'll help change the other things that the launcher can't change, like the settings menu, notifications dropdown, navigation buttons, etc. I believe that's the closest you can get without rooting - If anyone else has any other tips let me know. (I've been trying to figure out how to get the lock screen to look like stock android but can't figure out how to)

This is modded to allow swiping right to Google Now feed. Also, adjust scaling to 18:9 to get transparent nav buttons. Follow the guide in XDA post to enable badge notification dots.
