Instead of putting your phone to "DND" you can just mute your phone. This will still cause a vibration on your watch, but will prevent any sound or vibration going off on your phone. You can easily automate this using tasker. If you're able to sync your work calendar with Google, you can also use an app like this, that will automatically put your phone to silent during a meeting and unmute it afterwards - that's how I do it.

Exactly. I use an app that puts my phone into do-not-disturb state at night but allows me to whitelist calls/SMS from specific people so those always get through (as the only reason I can imagine them contacting me that late is in an emergency). Also has a nice optical feature where if a non-whitelisted number calls twice within a few minutes you can have the call ring your phone on the second attempt, with the assumption that it's probably important.
Not sure what device you're on, in my Pixel when I tap the DND icon it asks if I want it indefinitely or timed.
You can also check out Silence Premium, I've installed it on clients phones who forget to turn their phones to silent, it can follow your calendar and auto silence during events

It works pretty well most of the time but as Google has gotten more aggressive with power and memory management I trust apps to control these types of things less and less and just want it built in :)
I use Silence for this and it works wonders.. It allows favourites to bypass the silence whilst also notifies those that call that in an emergency they can call twice to enable ringer.

Yeah there are a few apps that do this, some free, some not.
My dad always forgot to turn off his ringer in meetings so I found this app that auto silences the phone during Google calendar meetings.
You could always set up a calendar just for your shift and have it only read that one for silencing your phone.. Then add your hours in, and bam, auto silence.

I had the same issue. I liked to set a night time and day time DND with my ZTE Axon 7 but there's only one available for the S8+ I have.

The benefit to the app I use is that I can create custom contact groups to allow through DND. For instance, at work I keep my phone on silent but allow work numbers through.

I went with the pixel 2xl after having the s8 since May. I just couldn't get around all of Samsung's crap. I really tried but I just can't do it. I wish Samsung would just make pure Android phones and stop with all the redundancy.
While I used the s8 though I did have a solution for your do not disturb issue. I've been using this app since my Nexus 4 days and it works well off Google calendar for setting dnd.
