There is a japanese version (and a fanmade english patch) for Android where you can read prologue + chapter 1 for free. It's a poor quality port though.

Yea you are overanalyzing it, even if a character have more screentime on the actual show doesn't mean he is more important.
One difference between VN and anime is VN have different endings and the anime only follow true end, but those endings aren't that important nor make Faris matter more because they are not even canon but only official material.

From what we seen, the pacing is awkward and horrible, it is like watching the anime pausing every few seconds then have some moments looped.
There is a option to cut dialogue and monologue, this option existed because with full content the pacing would be ruined, but even when cut content on which we seen from the gameplay video, the pacing is still awkward and horrible, imagine the pacing be even worse than that.
So you can either play with cut content, then you get less compare to the original, or play with full content which make the gameplay even worse.
I know you prefer playing S;G on Switch but please skip Steins;Gate Elite. The original VN are available in tons of platform:

Here's a tip... All SciADV mobile ports are shit. Don't waste your money on them. Play it on PC.

When it comes to PC versions... I say the JAST version is better(since it didn't need a fan made patch and doesn't have DRM) but others will say the Steam version is the best(play it with the fan made patch which adds fixes and the sort from the JAST version as well as other fixes). So I guess what ever you want to do there... They do use the exact same translation(well the menu translation is different for some reason) but other then that it's the same... It's very high quality done mainly by Blick (with some help from Steiner) if I recall right.

Steins;Gate is in a similar vein to Erased, I'd definitely check out the Visual Novel on Steam, PSN (Vita, PS3, or PS4), or Mobile (you have to download an english language patch for mobile, Here's a link!) or watch the anime. The mobile version also has a demo and lets you play through the first part of it for free!
