I've read that book too, and sometimes take salt when I fast, especially after sweaty outdoor exercise. Keep track of what you are eating that is causing your symptoms, adjust eating days as needed. I also find my digestion and sleep is better if I stop eating earlier, around 4 hours before bed.
I personally find eating 2 meals with no snacks on eating days most effective.
Fung's team promotes eating a lot of whole, one ingredient food, so if you are eating a lot of processed food, things like whey powders, etc, you may want to try whole foods. Sweeteners can also cause gi issues.

Some foods are more likely to cause gi issues, esp some veg, you may want to experiment with low FODMAP foods. But, tracking what you are eating, how much and how much of a break there is between meals will help you zero in on potential issues. The issues are from eating not the fasting but feeling better from fasting may be making you newly aware of what used to be "normal." Good luck!

I found ADF worked best when I ate two meals on eating days w/o snacking.
Other things to consider, sleep (if any signs of apnea try NAC or a cpap) or stress, cortisol increases IR. Also, are you taking any medications that impact glucose or insulin? Common ones are bcp, blood pressure meds, mood or anxiety meds, many allergy meds including Flonase, etc. If yes re: meds, talk to your doctor re: a more weight neutral version. Also, consider having your thyroid checked.

Dr. Panda has a book I am listening to on Audible and not eating late has a really big impact on metabolic health as does regular sleep. Ideally you should stop eating at least 3 hours before sleep for best sleep quality. People who do shift work have a higher rate of obesity and diabetes. It's interesting stuff. Try to shift your focus from calories to WHAT you are eating with an emphasis on protein, the fat that comes with it, and high fiber green veg in moderate amounts. It's a lot like people used to eat before there was an obesity epidemic. Again, I highly recommend the EYCC book I linked in this thread, it is very much like Dr. Fung recommends eating with a bit more specifics. Learn to eat those foods to satiety and follow your body's hunger cues. Trying to guess at what it needs is not working anyway, right? Learn to eat in an intuitive way but within a truly LC and moderate fat framework like he lays out in EYCC. Good luck!
There are lots of ways to do "keto" try Dr. Eric Westman's approach of 20g TOTAL carbs per eating day and not a lot of added fat, just the fat that comes with meat, eggs, fish, no oil in coffee, etc. This book was super easy to follow and has different approaches depending on how your body responds and goals. You don't count calories and you eat until full. He also addresses maintenance so finally no more yo-yoing. I found it really effective with IF. It also reversed a lot of health issues for me and really gave me my quality of life back.

I like Cronometer! You can use it at cronometer.com or download the app and they work together. You can look up specific packaged goods or add your own custom recipes with the exact ingredients that you used. It calculates the calories AND all the macronutrient information for you. Then, set the serving size (ie 4 servings in your pie) and you can easily log all the information for that single serving into your day.
It’s not sufficient to only take sodium chloride which is what 99.9999% of Himalayan salt is, you need the full range of electrolytes: magnesium, calcium, zinc, and potassium unless you want to harm your body. I use Hy Lite, Calm and take calcium and potassium supplements on top of that.
Gout - yes fasting can lead to gallbladder stones, to prevent that I personally take this supplement, it helps me a lot with discomfort I otherwise get in my side:

Another thing that might help is Happy Scale or it’s Android equivalent Libra . Going by straight scale numbers can be depressing or straight deceiving when you consider daily fluctuations. The overall picture is often very different than today’s number and you shouldn’t let a plain number with no smart algorithm behind it have that much control over your life and mood.
I can highly recommend this book. I read it last week and so far it's worked just like she said it would. Gin Stephens is the author and she lost 80lb's using ADF. She talks all about the research and how it works.
