Ok, so epub is pretty standard ebook formatting, and most reader apps can open it, including Kindle, Nook, and Calibre. I've never heard of Covers, but since I don't read comics online, so I have no way of knowing if it's compatible. Sounds like it's not. May be a comic formatting thing.
I use Moon+ Reader here in Google play, and it works like a charm. It's free, and let's you edit title,, author, and book cover. You have to import books to moonreader from their saved location on your device (I keep a dedicated ebook SD card for this purpose, but a file folder will work too.) After the books have imported, you should be able to view them.
Moon+ Reader and Z-lib also work on smartphones.
Fair warning, the formating of the actual text can be a little off sometimes. It's still legible, but sometimes it just doesn't adjust to screen size well. It's still not a bad deal for free though.

I’m a baby witch too and I’ve been advised not to start any spell work until I have a better understanding of witchcraft. I’ve also been told that the only spell work I should start out on is protection spells to keep me safe but I won’t start doing anything until I’ve done more research. I’m currently reading ‘the door to witchcraft’ that I’ve linked below and it’s really insightful - I’ve been told it’s a must read for new witches! There’s a book on protection spells that I’ve also bought and linked too!
Reading is your best friend but if you find that hard, you could check around for podcasts or audiobooks. Those are nice alternatives. The basics is usually how to protect yourself and simple meditation work. Protecting yourself consists of how to create a protective circle, for example.
I went looking up on Amazon and found an audiobook that was available for beginner witches. It looks promising, so maybe start there?

I studied it in bits and pieces through YouTube videos and using some of the old books lying around at my parents' house but they were mostly in local languages. Most Indian astrologers would recommend reading the Brihat Parashara Hora Shastra but it's quite literal and the direct translations don't have any modern context attached to it. E.g. certain positions that may have been considered bad in ancient India (such as those that indicated someone being forced to leave their homeland) may be linked to lucrative careers or lifestyles in the 21st century that may involve frequent travel or living abroad.
I have heard good things about this book from those who want to study Vedic astrology from scratch. Good introductory YouTube resources include KRSchannel but he doesn't go into a lot of nuance. Once you go through the basics and if you wish to study it more, then I'd recommend watching videos on channels like those of Visti Larsen or Lunar Astro.

You should burn your paper in a "cauldron", cast iron dutch oven, pasta pot, etc.
Hold it (or place it) in the pot, light it on fire (I use a grilling lighter or candle placed in the cauldron) and have the lid nearby (put the lid on at the end) ... problem solved...
If you are burning things in your room, keep your door closed, put a towel under the crack of the door at the bottom (less chance of odor escaping), and when you're done open your window for a few minutes - keep the towel in place - to let the room air out.

Lots of witches have digital grimoires so you certainly don't need to feel weird about having one. What you've got so far sounds good, and OneNote is definitely a good app to use :)
To add on to the catio and harness/leash ideas from others: I’ve seen some pop up cat tents made specifically for supervised time in the fresh air. That might be worth a look too. Something like this. One of my old coworkers had something similar for her cat.

Currently no I dont have any spells jars but for a visual they're glass jars for extracts a lot of people will use just small glass jars with a cork, like these but you can easily find them at a dollar store.
Rocks: You can use clear glass crystals, which a great use for those as you end up buying fake rocks with time, for the pressure and heat. Sedimentary rocks well my area is full of them but I'm not sure what you area looks like. You could probably find some on Amazon or other places or even outside of your area is like mine.
Herbs: Note herbs may have different names depending on region! Guidance Jar is mostly Butterdock, Ginger, Lavender, and Fern. Bay Leaf acts as a way to set intention and place on the person, personal choice but I always do this or ask for DNA (which i wouldn't recommend with you being a Neophyte, no offense its just tricky and can be harmful if not done right). Strength: Bee Pollen (it has the added bonus of association with friendship a bonus for your intent!), Turtle Bloom, and Thyme. Most of my herbs are home grown so I'm not sure if they work as intended please do your own research as well! Also some may only be found online for your, which of thats the case look for a substitute there maybe something in your cabinet that can be helpful.
Always do your own research. What works for me may not work for you. If it feels wrong stop and find something else to do. Also make sure you have whatever protection set be it casting a circle, buring herbs, or whatever else there is. Don't rush to do the spells without proper research. Look in your store cupboards. You never know what spices you have and your gut may say use this over this, go with your gut. I dont want to hear you got hurt because my work doesn't work with you. Other than that I hope its helpful!
So I'm a big believer in making spells personal for you and creating your own correspondences. Sometimes they match up with what is typically used and sometime they don't. But the symbolic connection needs to be strong to you, imo.
This book doesn't so much have medicinal properties of herbs, but it does have hundreds of pages of correspondences that the author collected from several sources. I like to look stuff up and then see what fits for me. For example, chamomile for success? Maybe to some, but to me chamomile = sleepy time, so I wouldn't necessarily use that in a success spell. However, this book is a really great place to start.
