First of all, I warn you: the Grimoire system is the worst quality of EOU. It's either unpredictable, ineffective or completely overpowered. Compared to Subclass system from EO3 and 4, it's terrible in terms of gameplay design.
Trying to get a specific skill in a Grimoire stone is type A: unpredictable. In order to get Prayer grimoire stone, you'll need a character with Prayer skill (I believe Protector is the only class to get it?). After that, if you want a good leveled Prayer (like lv5 or 10), you'll need to level that Prayer skill of said character to that level. After that it comes down to either having good luck in Grimoire chance or abusing using Lucky Scarab or Four-Leaf Clover. After THAT it's all down to synthesizing the skill to a otherwise good grimoire.
I hope you aren't planning on doing that to all your characters. Leave stuff like that to post-game.
I cannot really help you more than this because, in my experience, Grimoire system is best left for post-game completionists. If you're still interested, here is a link for a promising-looking GameFAQs thread which may help you (I think?).

Some skills have higher "turn speed" than others. For example, Protector's Wall skills and Bravery's Gift have very high turn speed (going even before shiny enemies) and Alchemist's Inferno/Cocytus/Thor formulas are much slower than Fire/Ice/Volt forumulas. I don't think there are any specific numbers and calculations out there, sorry. Defend usually goes before enemies, excluding shiny enemies.
Boost increases the level of skill used by 5, going even above level 10 (Boosted level 10 skill becomes level 15, for example). Even actions like Attack and Defend have increased efficiency, apparently.

Depending on how much of a cookie cutter team you want, it recommends the following:
F = Ronin/Protector - Dark Hunter - War Magus - B = Gunner - Hexer
I personally chose dmg dealers Ronin, Gunner, Hexer, healer War Magus, and my tank Protector as I dislike any builds that revolve around binds/status effects or other such luck/cheeses, but it's up to you. If you want to 100% the game without overleveling, you'll definitely need a DH or Protector. Their force skills are just too good.
I'm not sure I could see 2 War Magus, 2 Hexer, 1 Protector/DH working all that well, at least initially. Your team just won't be outputting that much damage early on without the Hexers' revenge unless you really see yourself having the patience to use status effect skills (poison) all the time. Some people harp on using War Magus' cursecut/transfer for infinite tp, so I guess it could work (I didn't need it for my team). I would substitute one or more of your WM/Hexers for straight up dmg dealers or just deal with the fact that it'll be awhile until you see a strong team.

Nintendo did make a stylus for Mario Maker 2, so it's certainly something Atlus could attempt for the physical edition of an EO game. Capacitive styluses are really cheap; you can buy them for < $0.50 apiece on Amazon:
I think you could squeeze one into a standard Switch case without too much trouble. It doesn't solve the docked problem, but if Nintendo was able to make a decent controller-based experience for Mario Maker, I think Atlus can manage for EO's mapping.
