What you could do is get a laptop and a USB OBD2 adapter like this one at Amazon:

Download and install Forscan (https://forscan.org/home.html) on the laptop and connect it to the truck. Set up a monitor for the misfire PIDs for each cylinder and then go try and recreate the issue. Even if it doesn't store the code in the trucks ECU, the monitored logs on the laptop will show where the misfire is.
This is an incredibly powerful diagnostic solution that any Ford owner should know about!
Check your local craigslist. Ford made both an aluminum and a polymer folding bed extender that rotated into the bed to do what you want. They can typically be found on craigslist for $50-$150. I have the polymer folding on in my truck and had the aluminum in my last truck.
