You maybe don't need any extra software, just a config change. In Win10, in the Control Panel, Ease of Access Centre, Make the mouse/keyboard easier to use, there is 'Mouse Keys' to enable numpad binds to move the mouse.
You can also get the FOSS Microsoft PowerToys to improve things like the Win+Arrow snap zone position and sizes (Fancy Zones), and remap some keys even if your board isn't programmable.
For even more customising, at least for Linux, there are tiling Window Managers, designed for no mouse usage.

Have you considered the GMMK ISO TKL?
It’s available in both ANSI and ISO and is a hotswap board so you can choose your switches and have the option to change the then out at a date should you fee like it.
This is a bare board, so you’d also need to add in the cost of switches and keycaps to get a full working board. This will cost you more than a Durgod K320 would initially, however you would end up with a more customisable board.
Silent Cherry MX Reds or Blacks for that matter are the initial go to choices for a quieter keyboard so you won’t go wrong with either of those.
You may also want to look into how to lube your switches and stabs. Lubing a switch will help to dampen the sound, as well as remove any scratchiness you may feel while operating a switch. Lubing the stabs will help to reduce or remove any rattling you get from the stabs while pressing on the larger 2u keys, the space bar or the Enter key.
Most of (if not all) these HK Gaming Keycaps have the UK 2, it took me a while to find some myself, i have a set of the "Chalk" ones from them, but i've just noticed the Purple and Yellow "Mamba" which i like the look of.

There is a choice of switches.
"Blues" are the only 'clicky' kind generally, "browns" are the quiet version that still have a tactile activation portion to the press action, and otherwise "red" linears are most popular for 'gaming'.
There's a lot of GK/SK 61-66 boards by Epomaker/Skyloong that have an S suffix BT version and white/pink PBT keycaps and Gateron mechanical or even optical switches for <£70, but I'm not familiar with cheaper ones.
For less you'll likely get Outemu switches, and ABS keycaps with ...poor legibility fonts/legends.
You can even get the seemingly-much-rarer UK ISO layout on a white BT5.1 board for £60.
Ducky One 2 will stretch your budget just a little depending on switches and caps. Overclockers has Ducky with Cherry blues for about £105. My wife has a Ducky and it seems decent for a lower end pre-built.
Durgod Taurus is a little over £100 also and available with blues from Amazon.
These seem like the best two options for TKL ISO UK that are regularly available. If you look around you might be able to find better prices.
These will do you if you remap the right Ctrl to any spare 1u keycap lolol. It’s mad bc HK Gaming make the Durgod and the keycaps sets but don’t sell enough keys for their boards.

I found this Mars Gaming brand (which only today showed in my Amazon searches, probably because they are shipped from the continent). It's a Spanish brand and they have Portuguese and Spanish keyboards, that in the end, have all the UK-layout keys I was looking for.

I was in the same situation recently, replacing switches and caps on K2. Also a stickler for UK keycaps, so wanted a full set - considerably narrowing choices. After much searching, I ended up with:

There are a few colours (most GMK clones?). Overall this set is good, the caps are thick and feel good to type on. The only omission for the K2 is the Home key - there isn't one with the right row profile - instead I used a 1U shift key which is fine.
The profile shouldn't matter, it's really preference - I was aiming to try a flat profile like XDA or DSA but I couldn't find a compatible set.
So I went with Cherry profile because that's all I could get!

The software is a bit hit or miss, but I have mine doing what I want it to.
You could pick up the CIY TKL from Amazon for £44.99 and then 3 sets of Gateron G Pro browns from Serpent Keys for £26.25. So about £75 all in.
The board is howswap and the G Pros are pre lubed so would just be a 20 min job to pull originals out and pop the browns in. You could then get some better keycaps down the line and perhaps even foam and masking tape mod it for better thock. The face plate is detachable too so easy to repaint if you fancy another colour.

I have a friend in Denmark and because they have all the extra letters it's a nightmare for them to get keyboard sets. They really want to get into mechanical keebs but there's not much that's suited to their market.
That's such a great idea to get spare iso keys! I haven't really thought of that, but I guess if they're a good colour match it doesn't really matter. I love that orange one, too. My other half just painted some of his warhammer minis in that colour scheme, orange and grey is *chefs kiss*.
The akko keyboards are really nice. I've been coveting the ergonomic one they've got on the site. Unfortunately it looks like all their keebs are 100% wired and mostly ANSI layouts. I prefer the ones with a bluetooth option because they're more versatile.
If she wants to get a starter ISO board I have this one and I love it. I have a Keychron K4 ISO too and I actually prefer the smaller, cheaper one. It's hot swappable and I put in the akko jelly blue switches. It's great for typing and an awesome first keeb for someone. I also found the switches were much easier to pull from this model than the Keychron which was really stiff.

No urgent need if you're not planning on lubing any time soon, but I highly recommend eventually picking up a metal switch opener like this. Avoid plastic ones - they're rubbish and break easily.
For the tape mod I recommend the green frog tape you can pick up in any hardware store, B&M etc.

Depends what format you want but a Keychron K2 is a great entry level 75% board. A hot swap version with red switches (linear)and white backlight is £85.00 on Amazon in ISO format.
You can do a few mods with this board and most importantly change out the switches to get a feel for what you like as and when you can afford to do so. Best way to gently ease yourself in.

Be warned about buying from shops online or in UK, the length of the pin (called pitch I believe) needs to be long enough so that it goes through hole in the PCB, specifically if you have plate mounted switches. I bought 600 SIPs from amazon (yes this was a total accident) that was just short off for plate mounted switches. but if you have PCB mounted switches and want to give it a try, PM me, they just might work.

Logitech G915 sounds like pretty much what you're looking for. Full size, low profile (with tactile switches), ISO, RGB, and can be used wired or wireless. In terms of the custom mech world, you'll have a hard time finding a fully customisable board with low profile switches of any type, so this is likely the closest you can feasibly get without spending a lot of time and/or money.
ah right yeah, I can see how it would be straight forward for the plate, but maybe the case foam would be a pain with the hotswap sockets, might be what I end up doing though. Something like this would be appropriate, right?

Well the keyboard you're looking at is a typical "gamer" keyboard, like the one you have or ones made by companies like Razer, Logitech, etc. These keyboards are fine if you're just looking for a keyboard to use to get you through the day but they have essentially no customisability. Once you get one of these there's not much you can do to change anything about it like the keyswitches or even the keycaps.
If you're looking for a more customisable experience (hotswappable switches, etc.) then I'd recommend something like this.
But in general it seems like you're not that experienced with custom keyboards yet, which is fine, but if this is a hobby you're looking to get into then I'd recommend you do a lot more research and watch a lot of youtube videos before buying anything. But yeah, if you're just looking for a simple mechanical keyboard to get you through the day then the cooler master or the keyboard I linked would both work just fine.
I can't suggest good, but good enough to get 1 job done. I picked up [one of these[(https://www.amazon.co.uk/dp/B07Q4T12PH), and after a total of ~6 hours soldering and resoldering a kb kit (I put legs on the mc upside down while making it socketable...), at 220-300C, 3 tips are broken/blued/golden from heat, so I would not be sure enough right-sized ones would be left to do a whole other project. I only used maybe 1/4 the provided solder though so that was fine, the rosin core .6mm was fine, and the copper wicking braid is very effective.

Well, for the left shift I actually like having the larger shift key as it's quite nice for gaming and such. For the right shift key, I tend not to use this very often unless it's assigned to something in a game I'm playing. But the right shift key can vary in size when it comes to custom boards I've found, depending on key placements and the size of the board (60%/65%/75%/etc). For example, with the ANSI layout GK61 it has a large shift key on both sides, whereas the GMMK Pro has a short right shift. To be honest, I think it's just to do with the key placements and if there's any obscure or missing modifier keys.
Admittedly, you get used to the change in key sizes very quickly. The main change for me for the single row enter/return key as this was so different to the standard ISO enter/return key, but it actually makes sense with how you type and looks more uniform on the keyboard in my opinion!
One of the biggest things for me, being a UK user, was the £ sign. I tend not to use the dollar symbol at all so having this was vital instead of having to use different alt codes (which I can't really without a numpad) or using different layers on the keyboard. I instead managed to remap the keyboard using Microsoft Keyboard Layout Creator to compile my own keyboard layout and then setting this as the system default, therefore removing the dollar sign and replacing it with the pound sign. Same goes for the @ symbol and a few others I'd personally modified.
All in all, going from ISO to ANSI I'd say is easier than the other way round and I can still use ISO if required but ANSI is much preferred now!
I got an Anne Pro 2 from a website called https://www.banggood.com/ last Thursday for £63 and free shipping to the UK and supposed to come next week arrived today the only issue is it is in ANSI and not ISO UK. OR, the keyboard I am replacing with the Anne pro with is the pok3r (white, no RGB and ISO UK) if I can find the box I would be up for selling it on.
You could also use a bit of software like Auto Hot Key.
TLDR: you can create your own little shortcuts for doing certain things, so could easily make it so pressing Ctrl + [a key] will produce a pound symbol.
It'a awesome and I use it to make em dashes on my TKL.

Usually, one of the first things I install on a computer straight after Chrome is SharpKeys. Haven't come across a tool that makes re-mapping any key's functionality such a breeze.
But to skip that shenanigans altogether and have it done directly on the keyboard-level is an absolute joy.
Razer do shine through pbt keycaps with ISO. They have them on Amazon but make sure you get the right set.
Apparently good quality but not the best shine through if that’s really important to you.
I got this as my first board. Small 60% which frees up a load of desk space without sacrificing anything. I did miss the delete key at the beginning but it doesn't bother me anymore.
Switches are hot swap and I've tried a fair few out on it now. Would definitely recommend if you're looking for a 60% board.

I have the RK61 (60%) that I use for the office, Can't fault it at all. Brown switches are perfectly usable in an office environment but you have enough in your budget for any switches you want.
Any PBT caps you find that are for MX-style switches will work. I have the BladeMaster PRO, and have had these YMDK caps on it for over a year now. The set has all the caps you need.
This? Isn't mechanical, seems proprietary. Sometimes membranes happen to have compatible dimensions with mechanicals' stems, but you would need to try that yourself, possibly also modify the stems or caps to work.

Have you seen those electric desoldering pump things?
It's only 16 quid and it's soooooo much better than trying to get a non-heated pump onto a fillet you just heated before it cools, honestly. Highly recommend
here is the foam i used. picked the 150x150x3mm and came in 8 sheets. 1 sheet is all i ended up using.
These are PBT double-shot and full UK ISO layout, but they need backlighting if you want the legends to be a bit brighter. I've picked some up for a keyboard I'm putting together for my housemate so that I can get my main keyboard back. 🤭

Hey, I’ve just built mine, and the foam I used in the bottom of the case (linked in my previous comment) was 3mm and worked perfectly. I did one layer in the smaller cutout and one layer across the whole base of the case. I did I-ring mount my pcb/plate slightly off the standoffs though so that would have raised it slightly - although I’d recommend doing that as it’ll give a much more even typing feel.
Also, my original plan had been to cut my foam into strips to be able to have some between plate and pcb, but that didn’t work - I ended up buying this foam from Amazon, and trimming it down for my 65% layout. Although if you’re not in based you’ll have more options - but I found it hard to find plate foam here for a reasonable price.

I decided to go for one I was looking at on amazon (https://www.amazon.co.uk/gp/product/B085249L6R/ref=crt_ewc_title_dp_1?ie=UTF8&smid=AOX42M1QYZ4TV&th=1) because I found someone selling it a tenner cheaper brand new on eBay. I've since read that the cherry style keycaps can hit the top of the north facing switches... so i've just got some hard 70a o-rings off amazon to hopefully raise the cap enough to stop it hitting the switch, but hopefully not make it feel "mushy" as it's a harder rubber... that's my theory anyway, we'll see how it goes!
Yeah sorry actually didn’t really specify much. To be honest when I said nice I just meant in terms of quality (I personally prefer PBT). The majority of sets I found where just variations of the same colour code (main colour surrounding by a block of accent colours example) so I was looking for a more unique look like GMK dots or themed ones like the GMK hammerhead. I find those types much rarer (for obvious reasons) and couldn’t find a place that offers similar originality. I’m also looking for an ISO layout (which again harder to find) for a gmmk pro
Then I'd suggest considering the GK6+ remappable GK68XS, with split spacebar and hotswappable sockets. And if you don't fancy that adjustment to the backspace position, there's the GK64XS, and others. The point being you get remapping, hotswapping, BT5.1, and even decent PBT keycaps for <£100, and also enable most aftermarket ANSI keycap sets, and non-optical switches. Probably worth the tradeoff vs ISO.

65%, ISO, Silent Gateron Browns. Ticks all your boxes and i'll be amazed if you can find something cheaper. You can also choose between black or white.
Try these HK keycaps on Amazon. Don't have 2", 3£ keys but should otherwise fit ISO layout.
I have a HHKB Pro and personally think the switches are fine for gaming. As you can see not everyone agrees, so it really just comes down to preference. If you like a tactile, thocky switch - its good. If you like very light linear switches for gaming, then not so much.
Switches aside, it's worth mentioning that the HHKB layout doesn't have Left CTRL in the bottom corner, so if you use that for crouch or something you'll have to adjust to using caps lock instead. Or, get Topre but in a different board like Realforce R2. In stock, high end, TKL.
If you wanna stick with MX switches, maybe something by Varmilo.
