"Comedy Writing Secrets" by Shatz and Helitzer is a book that is helpful to explain how comedy works in general. Once you've read it you will see how all humor follows the principles described in the book (Examples .... surprise, making you feel uncomfortable and then suddenly releasing you from your discomfort, making you feel superior to someone else).

The book also has a chapter on humor in speeches, but if I remember correctly its real value is explaining how comedy works.

It's a fantastic collection of anecdotes from popular, successful business leaders across different industries. They're all sorted by theme/key message and I've found to be a helpful reference point for persuasive speaking.
Specifically, I use Toastmaster Timer https://play.google.com/store/apps/details?id=com.vivek.toastmastertimer which works nicely particularly in terms of toggling the full display to the green/yellow/red as desired. It works fine for non-Toastmasters events as you can set the timer to whatever custom times you want.
