Have you spoken to your pharmacist? If the capsule is only there to facilitate taking the medication (easier to swallow than loose powder), you could discuss using a different brand of capsule (there are some that are plant-based ). That being said, many medications have a time-release coating to ensure you're getting the right dosage throughout the day, so it may not be an option. But asking won't hurt!
ETA: taking the medication, even if it does have gelatin, does not make you any less vegan, as others have mentioned. My comment was not meant to be medical advice, but a suggestion of an alternative that might allow you to take your medication in a way that you are more comfortable with.

No need to feel that way, if it makes you feel any better; I had a huge ass salad with 1.5kgs of frozen vegetables and 3 cans of chickpeas yesterday. Also sprinkled it with like 10 handfuls of nooch and have been farting ever since lol. It never gets that bad for me but what people recommend is to increase fiber intake gradually, and stop for a while if it causes you severe discomfort. You can try something like cronometer.com and track all your food for a while (need a scale but the website is completely usable without paying). You can also try making another spreadsheet with your level of discomforts on a scale from 1-10, maybe color code it for fun. Then after a couple of weeks you can cross check the two lists to find out what type of nutrient causes you discomfort.
The statistic they are quoting comes from this study but they are completely misinterpreting it. The statistic is simply that the food is "inedible by humans". But it's not all byproducts. It's mostly feed grains and legumes grown for animal feed, and pasture land specifically used for animal grazing. So, sure, field corn and open pasture is not "edible by humans", but for the most part it's agricultural land that could be used to grow human edible crops. Less than 1/4 of the food in that statistic is actually byproducts or crop residues.
It's also important to note that this statistic is measuring by weight and not nutrition content. The grains, fodder crops, and oil seed cakes have far more nutrition content in them by weight than the other things counted there. For example a soybean oil seed cake has about 5x more calories than crop residues by weight and even higher levels of protein. Measuring by weight is not a good measure of how much meat is produced from which plant food sources.

You could always buy the bottled stuff, too. Califia makes some good coffees and Starbucks has a vegan option out now, if it's available near you. Buying a pack or several bottles, or a big bottle and pouring it out in the morning, works just as well.

The proportions in that supplement are weird as fuck. And I have no idea how it can be justified to take that at a rate of "2 per day"; lots of the micros would be way overdosed. I certainly wouldn't consume something like that myself even at a lower dosage.

Have you read the book Vystopia By Clare Mann? It might be a great thing while still searching for therapists, as the author is a vegan psychologist that works with Vegans that struggle with the way our world treats animals. Could be a good read for your daughter.

Do the daily dozen challenge! Use Cronometer to track what nutrients you might be missing! Make a quick smoothie or look up some recipes that include stuff you’re having trouble incorporating. It’s super important to be on track nutritionally, vegan or not.
Also, meal prepping whenever you have time helps so much. I have a never-ending stock of meals in my freezer.
I feel hungry constantly too, but us skinny people have fast metabolisms. Snacks on snacks all day haha.

I was very suicidal several years back, but this was before going vegan. Medication and therapy saved me. I also almost died in a car accident. Almost losing my life made me appreciate it more. I might not always feel loved, but I know that there are people who would be hurt if I died, and I’m sure there are people who would be devastated to lose you, too.
I do now sometimes get feelings of “well fuck this, the whole world is shit, life is suffering, and everything is pointless.” But the animals need us. If all vegans stopped existing, there would be no one left to speak up for them. You have a positive impact just by existing as a vegan.
I highly recommend dialectical behavior therapy, aka DBT, to anyone dealing with mental health issues. It teaches you coping skills to navigate overwhelming emotions. My (expensive) intensive therapy program used the handbook/workbook I linked to below. This really, really helped me, and I still use those skills today. I provided an Amazon link, but I’ve also seen it online at Barnes and Noble, and you may be able to find a free pdf online.

Sometimes the ingredient lists for products can differ between markets, and I know there are some Korean and Japanese foods that are non-vegan domestically but have versions made for other markets that don’t contain animal products, so it might be worth checking the ingredients list to see if the phrase above appears. But yeah, doesn’t look good. Sorry. :(
Yeah I already kinda did, I worked for a vegan company and I rewrote their Android app which is called vanilla bean, it's kinda like happy cow but better looking and only showing restaurants where there is at least 1 vegan meal. Happy cow also shows vegetarian restaurants as far as I know. The only downside is, that happy cow has more entries internationally.
