I typically get my wings from Whole Foods meat section. Wings
I don't cut anything. Hope you enjoy bringing the air fryer back. I am enjoying mine!
>I’ve heard mixed reviews on them as a whole, but there are so many brands making them now it’s hard to know which one to go for
There are mixed reviews on a lot of them, IMO, because the excel at frying some things but not others. I've had one for six months and my take is this:
So if you buy one because you do a lot of frozen french fries and want to make them faster and better, you'll think an air fryer is the greatest thing ever made. If you buy one because you want to make Southern buttermilk fried chicken without dealing with all the oil, you're going to be very disappointed.
The best ones are the ones that look like toaster ovens and they may be called convection ovens instead of air fryers (basically the same thing) The square ones that have a pull-out drawer are also very good and a little more budget friendly. Avoid the ones that are round or that brag about being 5/6/7/8/9/10-in-one devices. IMO the more things an appliance brags about being able to do, the fewer of them it does well. Also, don't get the ones that look like stand mixers with glass bowls. You'll see what I mean.
I have this one and I'm pretty satisfied.
So after cutting the tip, flat and drum I pat super dry and let sit out until room temp. I season with salt, pepper, garlic powder, a little garlic salt, onion powder and paprika. Then I toss in a bowl and coat with baking powder (super important). The baking powder is a huge factor in making crispy.
Then I lay all the wings spaced a part on a grate over a pan in the fridge for 24 hours. Something like this -

Letting them air cool in the fridge does wonders.
When it was time to cook I baked at 450 for 30 minutes each side.
Last I simmered the sauce in a pot and dunked one wing in at a time. Then sprinkled some chives over.
I enjoy baking over deep frying. Less mess, slightly healthier and in my opinion easier too. These wings really did have a great crisp to them.

I'm in the UK so got it from Amazon UK here:

I imagine they do them internationally
2 cups Frank's
1 stick butter
4 habanero peppers
2 jalapeño peppers
1/4 cup vinegar
Cut the stems off the peppers and throw away. Chop the peppers up a bit and throw in a small frying pan with the vinegar and about an 1/4 stick of butter. Include the seeds. Cook on medium heat till the peppers are soft. Dump the whole mixture in a magic bullet and blend till it's pureed.
Mix the pepper mixture with the Frank's in a small pot.
Heat up quickly till it almost boils. Reduce heat to simmer. Stir every once in a while. Do this for about a half hour or until you can tell the sauce thickens up a bit.
Take off the heat and add the rest of the butter in small pieces. There should be enough heat in the liquid to melt the butter.
I also add a little of this to the sauce to add another layer of flavor. Johnny's Garlic Spread and Seasoning, 18 Ounce https://www.amazon.com/dp/B01N1475LK/ref=cm_sw_r_cp_apa_i_uMt4AbNGW2BQE
I also added Bleu cheese crumbles to the wings when I mixed them up in the saucing bowl. Pretty tasty.
Great heat without being obnoxious
