I use an app to track my reps/sets/weight. FitNotes for android, it's free, adfree, and full of good features - it automatically calculates and graphs volume. Otherwise calculating volume is just Reps * Sets * Weight.

Calisthenics is a good alternative. Gymnasts have really strong tendons.
Some people have to basically eat until they can't anymore to gain weight. Just a body type thing. If you aren't gaining weight (weigh yourself) then add more food until it works, assuming you are lifting 3/4 days per week. I'd add something super high in protein if I were you... like a smoothie with protein powder in it. This ensures that your excess calories get stored as muscle not fat.
weed is correlated to lower body size, so despite the munchies it probably doesn't help you gain weight.
You've set some very nice goals for yourself and most people don't even make it that far. For calories, google 'tde calculator' and that will take you to a free online calculator that would calculate your daily maintenance calories. That is the amount of calories that you would need to eat without losing weight but sustain your life. There are many to choose from and some have options for adding in other lifestyle activities and such.
For resistance training there are many to choose from. My favourite is pullups and you can get a doorway pullup bar online for around $50. To save money you can find one used. That and a set of resistance bands like this one are ideal. You can save money by getting one band at a time and they allow you to get very creative with at home workouts. If you'd rather spend $0 thats fine as well. Pushups would be the best option in that case. There are so many ways to do them and they typically take little skill to learn. The pump is fantastic!

Honestly, just buy a body fat % scale on Amazon and weight yourself at least once a week, the same time every week. It'll show you what what kind of gains and losses you are getting.
