Yes, they do. But, lucky you. You can get a modern power supply for the Atari 800/1200 for a reasonable price. The link is to the one I use with my 1200xl.

If you go with a Sophia (which I have and love), you will also need an audio out cable. And you may want a device which combines the DVI and audio into a single HDMI signal for use with a TV or monitor. This is what I use and it works well.

3) I haven't tried VGA with my Atari 800, but I've had luck with an RF to TV Coax adapter. They're about $6 on Amazon. I've also got an 800 XL running its monitor output to HDMI. I use a one of these and a 5 DIN to RCA cable.
4) I used to play the Ultima games the 800. They saved to disc IIRC. I'd expect the SDrive-MAX drive emulator or FujiNet to be able to save. I haven't tried though. FujiNet is definitely the device to get. I have both but don't really use the SDrive-MAX anymore.
