I guess it ultimately depends on if you're looking for an electric or flame option.
For a flame stove, a Jetboil flash would be a great option that boils water super quickly. Normally, I open my trunk and set it up in the back and it's perfect. Realistically, you could probably use this on your center console with the windows open and have it be "safe" because it won't be burning for very long so ventilation isn't a huge issue; however, fire is still an issue.
For Electric Kettles, it kind of depends on if you only want it to boil or heat up water to other temps as well. I have a 1000x Jackery Battery that will take any electric kettle that uses up to 1000 watts. My recommendation is to keep it simple. We are in eastern TN and have car camped some in the Smokies as well. These window screens are excellent for keeping airflow but not bugs in. We use a rear hatch tent as well that gives more leg room and keeps it breezier too.
If you are doing weekend trips, I've found you don't need any fancy charging situations. I usually bring a 10,000 mAh battery pack but don't really use it. We have car chargers and make sure to plug in devices while we drive them turn them off overnight. When we are out camping, being on our phones or any device is pretty low priority so we'll bring books and read instead.
For a sleeping pad, a foam mattresses is going to be the best. We have a full sized 3" foam mattress and it's almost as comfortable as our bed at home. But it's bulky, so that is also a factor too.
Keep it simple and go try it out and see what you need and what you don't use. Don't spend a whole bunch of money on stuff that looks cool, you'll end up with way too much.
If weight isn't a concern, I prefer a heavier short maul over those style hatchets. I bought both a Fiskers and Gerber hatchet in that style. They were nearly identical save for the color, and both had warnings saying never hit the hammer head with something else because it might break apart. I gave both the Fiskers & Gerber hatchets away to other people and got two little mauls.
If you vent/crack a window you should be good.
BUT you can get a collapsible water kettle that the jackery 1500 might be able to keep up with it.

Yes, I carefully and in a well-ventilated area removed the fiber glass cover from the mattress, then used a hack saw to cut it down to size. In the future I plan to have a custom cover made for it.

I have one of these, works well for the size, though its a little annoying that standard wood lengths like you’d find at a store are too long. If that’s your wood source, would recommend cutting lengths in half before leaving.

itll charge my laptop once and my phone 4+ times. IMO no need to pay for a $300, heavy jackery that takes up too much space if you dont absolutely need it. i dont run any electronics that i absolutely need anyway except phone. i charge it in the car while i drive places so it works
I love mine, but I run a fridge. Without that, I think you can get by just fine with small power banks and recharge as you drive.
Once you own one you start to find other uses for it, ebike recharging and electric blankets and hot logics. But all of these things including the fridge are nice to have, not necessities. I don't think regret is too common - if I see regret on the FB groups, its usually for trying to skimp and buying one that's not big enough. So once you do pull the trigger, try to do it right and invest a decent amount. But until then, nothing at all wrong with keeping things simple.

I use this when I go car camping and it works great. The sleeping bag itself (without heat) isn't the warmest and honestly seems like a cheap bag with heating wire elements inside but this paired with just a wool blanket keeps me plenty warm and sometimes so warm I sweat inside the bag. I have a dual battery setup in my car with tons of reserve power so I don't know how long it will last plugged into a power bank or a jackery but I couldn't imagine it uses that much power. I don't use it often so I'm not sure of the longevity but I'm always careful rolling it up so I don't pinch the wires. In regards to cleaning the sleeping bag I just wipe it down and spray it with Lysol before letting it air dry. I always try to clean myself before crawling inside it in an attempt to keep the dirt out since I'm scared to wash it by submerging it in water. I wouldn't use this if your life depended on it in super low weather or if you're someone who wants a lightweight hiking setup but if you're camping or don't mind bringing additional blankets & gear then this is a very warm bag that works for me.

It weighs like 10 lbs though, so def not a backpacking bag lol. But perfect for a car camper.

I went from backpacking with my wife and I, to backpacking with the two of us and our twins before they turned two. It's large enough that my wife and I can sleep on a queen blow-up mattress, my twins can sleep on cots, and plenty of room for our two dogs. There is plenty of room for gear, room to change the kids, and anything else you might need. All of the zippers are durable enough to last years of abuse from toddlers and sturdy enough in reasonable winds. It was a great way to introduce my kids to camping.
Whatever sleeping/cushioning surface you end up using, I recommend putting an underlayer between it and your platform. Its very common for vehicle camper platforms to have problems with moisture/condensation under the mattress, particularly in snowy conditions when you are likely the have the windows mostly closed and insulated. A product like this between your mattress and platform will help with airflow and prevent mold issues over the long run.

I'm really happy with it so far. I use an AGM battery with a 20amp DC-DC charger wired to my alternator so it charges it up nice while driving. It can be used as a freezer (-5 degrees F) but I use it at 36 degrees F and it can maintain that well through the night on the deep-cycle battery, as long as I run the car a bit every day.

I looked into the DIY route for the rear hatch but I don’t trust being able to get it to fit well enough without spending a ton of time and money in making it. It’d be ok if you lived in an area with minimal bugs using elastic and magnets but where I live if there’s a gap, the mosquitos will find it.

I think you have a great attitude.
It doesn't sound like you'll be doing multi-day trips. You shouldn't need much more than a styrofoam cooler (cheap), and maybe a small plastic bin for things that don't need cooling. If appropriate, get a second plastic bin for anything medical related, it's better to keep them separated so you don't have to go digging around.

I used to take a mattress topper (3") when car camping and used it in my tent when tent camping but could never get comfortable enough, and I'm a side sleeper. I just purchased a self-inflating foam sleeping pad which is about 4 or so inches thick and gave it a test snooze on the floor after unboxing it after work last week. Very comfy! It uses the carrying bag to inflate it and has a reversible valve that makes inflation and deflation very simple. A quick roll-up after flipping the valve and I was able to fit it back into the bag. I'll be using it for my road trip (car & tent camping) in a couple of weeks and am looking forward to getting some better quality sleep!

I find this, in combination with a folding bucket on the ground, much easier to work with than trying to hoist a heavy bag full of water overhead. I've used solar showers in the past but getting the water up and overhead is always a pain.
You can heat the water in the bucket over the stove beforehand.
After fiddling with different backcountry shower options, I've come to really appreciate the value of a good truck stop or campground shower. All of the available camping options come with compromises. So my first line of defense is finding a public/paid shower every few days, and using wet wipes between showers. I only break this thing out as a backup option, to be honest.
USB shower can also be pretty handy at the beach for rinsing off sand.

Try to eat fresh and keep fiber in your diet - you don't want tummy troubles on the road.

You're going to have to do laundry at some point. Have a plan.

Pack a modest first aid kit. Make sure you have imodium and ibuprofen.
An ezpass toll box is good investment, and have spare cables for your phones.

Look for ShadeSox (that brand actually sucks, cheap and thin... magnetix or something like that is WAY better). Amazon has tons of options but make sure you look at sizes because the ones that fit my ford focus definitely did not fit my honeys dodge durango lol. Those are really helpful with making a "barrier" that the dog wouldn't go through and we could leave the windows down. It also helped with keeping condensation down at night because we could leave the windows cracked without bugs or anything else. Never once had an issue. Also seat belt leashes!! I Chinook forgot how big of a difference those made when I was nervous he would jump out the window still. My mom has a 65+ lb mutt (German shep, white Swiss shep, boxer, Rottweiler, chow chow 😅😅😅 thank you DNA test) and this is the one she has used since big boy was 10lbs....

This is what I have, it is waterproof and easy to clean. I'm not very strong tbh and I can roll it up and fit it back in the bag in 5 minutes. You probably already have enough ideas for dealing with it here, but just to keep an eye on the battery, it may be worth getting a battery monitor. I have the Ancel BM300 which connects with my phone over Bluetooth and was dead easy to set up.

I'm not sure you'd consider this a hiking hub, but the hike to Twin Lakes in the Kaiser Wilderness is an old favorite of mine. It's a moderate-level day hike and the scenery is stunning. Be aware this early in the season there can be patches of snow along the trail that make it easy to get lost. It's near Huntington Lake and there's all kinds of hiking in the general area, but I'm not sure what all's open.

It says it’s a 37 quart freezer. The 3 inch version. I’m side and back sleeper and this one is comfortable. It folds up to be smaller than those tri fold mattresses. It’s mostly self inflating and you just need few top up puffs. It’s insulated. I even squeezed 2 side by side.

I used to try to use my axe on everything too and it wasn't that convenient. I recently got a folding hand saw and it's amazing. It's called a "Silky GomBoy Professional Folding Saw".
I cut several large logs for my fire and it worked great. Very smooth and easy cutting. My dad loved it too so he ordered one for himself.
One important note: It's designed to only cut on the pull, not on the push. If you try to cut on the push there is a chance the saw can snap (see the reviews on Amazon). As long as you only cut on the pull, and don't force it forward into the wood for a push cut it will work wonders for you.
I've been using this solar panel and batter bundle from amazon the past few months. Works well for me, but all I need it for so far is lights an my laptop. If I needed a 12v fridge I might need a bigger battery. I've only used the solar panel a handful of times so far, as I've yet to go full-full time (car issues keeping me from going to far atm). You can but the battery and solar panel seperately.

These worked great! I’m probably going to get a set for the front windows as well. But it should also be noted my windows are already a pretty dark tint so I can’t say how well it will work if you don’t have any tints

So you can charge it at a Starbucks, solar panel, or while car on. Sorry, nothing is cheap. I recommend the jackery 500! Unless you got money then get the 1500 version.

Also since the magnets stick around the frame of the door you can slide them back when not in use.
This one (20qt) just barely fits in the footwell behind the front seat of my 2011 Forester. It was only $60 and had a different name when I bought it 10 months ago. The cooler itself is the same though, so you should be able to safely assume that the 21"x13.3"x14.3" dimensions should fit. I can't imagine the 2021 Forester footwells are smaller than the 2011.
I use XL ziplock bags to hold my food in the cooler. One bag is big enough to line the cooler. It prevents food from getting soggy. After I switch from block ice to bag ice on longer trips, I can lift the food bag out of the cooler to make it easy to drain water from the cooler.

Additionally, since my cooler is very tall I actually stopped using the milk bottles last year and swapped to freezing about 7L (room for expansion) in this water bladder. That way it sits flat and I stack on top. It doubles as emergency water too!

But here is what I've learned about cold and foam— most memory foams get hard as a rock at frozen temperatures. I need to use a 12v electric blanket to keep my pad and my pillow soft enough to be comfortable. Enough blankets and body heat should work, but I toss and turn, so I can't rely on blankets keeping the entire pad warm.
ive done a 30 day 8k mile trip to the western us. i took out the passenger seat which gives alot more room for storage. i cooked out the back and slept on a trifold foam mattress. kept a cooler and water jug. its a small call but its definitely doable. not sure if you have clothing storage or not but i used these collapsible bins from amazon and they worked perfectly.

I'm leaning towards a non inflatable type mattress but they ain't cheap. I'd like to stay under 150 USD. Ideally it would be between 48 and 55 inches wide and 72 inches long with enough padding for side sleeper hips that are over 50 yrs old.
We love the car tent and it's super cozy inside. I have put down 1 inch thick home gym floor tiles in the back for extra padding and protection. I'm looking for something easy to keep clean, dog claw durable and can be stored easily when not in use Thanks in advance.
On a similar vein, I've seen someone make a platform (with plenty of storage space underneath) with plastic stackable shelves, like this. OP can even trim the legs to desired height (or if the floor is uneven). Arranged 2x2 it can just about fit a full size bed. There can be cheaper options in your local home improvement store.

Make sure you have good ventilation overnight! Sleeping with the hatch open is usually not ideal unless you want to be eaten alive by bugs. Normally I suggest some of these window shades but they won't really work with your Subaru.
I would suggest a rear hatch tent. We have a slightly different one and it increases leg room and get some good airflow! Also, it gives some place to stand/sit if it's raining.

Just something like this. They are cheap and generic so whatever ones on Amazon look best to you. Just make sure you choose back window or front window as they are different shapes (front window ones have a gap and an elastic loop so you can see your mirrors while driving).

I have the large version of this firepit. It uses wooden pellets or you can but actual wood/logs. I buy large bags of wooden pellets at tractor supplies for $5 and it can last me all night. The pellets put out an incredible amount of heat and the ash falls through the grate for easy clean up.
Yep, I use these. They’re very bright, super useful. You can also do battery powered LED string lights but I have both and these are definitely the better option.

They make air mattresses that are designed for it. I’ve never tried it because I’m too tall.
