Pastry cream - Recipe seems about right.
Glaze is usually apricot glaze or clear glaze. Depends on what it is used for.
- Heat apricot jam/preserve add some water/liqueur
- Sieve.
- Brush on pastry/fruit with a brush while warm. Not hot.
