I agree with reading The Enigma of Amigara Fault first, its probably the best introduction to his style and tone, and it lacks a lot of the gruesome nature of his other work while still being unsettling. After that, I'd say move onto Gyo to see if thats your cup of tea, as its one of his most gruesome works. Uzumaki is great, but a tad weird to read if its your first, because its more of a collection of short stories that are kind of interconnected than one long story.
However, my personal favorite thing in the world is reading through his short story collections. One of the biggest problems with his work is that its kind of hard to find in order, there aren't a whole lot of organized collections or lists. So while I hate to say this, your best bet is a torrent to download his work rather than read it online or buying the official release (pretty much just Gyo and Uzumaki currently, buy those if you like them to get more of his stuff stateside). The Kurosagi Corpse Deivery Service might not be a bad choice then. It's different from Ito (he's the king after all), but the setting is quite often creepy enough to make it very exciting.
Dark Horse is releasing the titles in English so you can buy them. You can get them both in single volumes and in omnibus editions.

I tend to read The Kurosagi Corpse Delivery Service along side of my habbit for reading Ito's stuff.
As another posted mentioned "I am Hero" is also a good series, but focuses more on the traditional zombie apocalypse so in this day of age doesn't make it that "weird" or "out there", but definitelly entertaining.
Oh, my bad! You can find the psychical volumes on Amazon. This is the only place I know where you can find japanese volumes, so sorry for the lack of variety. I hope this helps!

I looked on Amazon for a box set, and it looks like buying the books individually is a way better deal. There's a bundle of Uzumaki, Tomie, and Gyo for ~$80 USD here, but all three books retail for about 20 bucks each.
