Click change server in blue. Bottom right in the middle of the screen
Search Amsterdam. Then select PhoenixNap
Click go.
Based on what you’re saying it could be a number of things. As others have suggested a VPN would be an interesting thing to try (look at Mullvad). Also you’ve probably tried this but check if there’s a difference between the 2.4GHz network and the 5GHz network.
If you’re sitting in the same room as the router, with not a single wall between you and it, do you still have the problem? If so it could just be thick walls. If this is case I’d get a power line adapter or a second router and wire that to this one to get a stronger signal in the room you work in.
I'm using a mini PC running PFsense. Full gigabit throughout plus advanced firewalls, VPN, routing and filtering capabilities.

I'd strongly recommend a separate switch - a 2.5 or 10gigabit switch linking all your devices, servers and so forth together with a PFsense router appliance as a router only.
If it's the same issue with a different router then either the cable connecting the hyperoptic socket to the router is faulty(you can try a different cable if you have one) or hyperoptic has some kind of fault in their network in your area.
Also are you still using speedofme? I get really shit speeds on that website (300 mbps).

Here is my current speed test results..(separate issue from my original post)
I have replaced my Hyperoptic Nokia router with this one https://www.amazon.co.uk/gp/product/B089YXY2YH/ref=ppx_yo_dt_b_asin_title_o06_s00?ie=UTF8&th=1 I achieve speeds of 780 on Wifi. I have been using it for the past month and my experience so far is very positive. It is a stable router and currently manages 16 devices, plug and play and you can quickly set it up using the App.
The thing is, others need to have iPv6 too, its less common that you'd thing. If you wanna see if they have iPv6, tell them to go to ipv6.google.com and if it works then they should be able to join
the only solution ive found around this is to use this program called ngrok. you would use it using the command 'ngrok tcp 25565' it works with people with ipv4 too and didnt take me long to set up, you also dont have to port forward with this.
i just realised you said you have a static IP, thats the one that costs £5 a month right? why would you wanna use ipv6
I'm a Hyperoptic noob with gigabit. Been doing a bit of research and it seems that if your modem router (assuming you changed from the provided one) is 2.5gbe you are more likely to hit the higher speed as long as you use a 2.5gbe usb3 ethernet dongle if your computer only has gigabit ethernet card.
I've got a cheap sh1tty Dell Inspiron which was cheaped out with 100mbps ethernet port. A while back I swapped out the wifi card to a 2x2 and as soon as I went live on Hyperoptic I ordered a 2.5gbe usb from CPC ( https://cpc.farnell.com/pro-signal/psg91497/usb3-0-to-2-5g-ethernet-adapter/dp/CS32425 ) I cant afford a new puter or 2.5gb modem router just now, but coming from plusnet where I was barely getting 30mbps (max 4.2mbps on torrents) I'm more than happy with my at least 700mbps until I can afford new gear.

The router Hyperoptic has shipped in the past will cap out at 450Mpbs ish because it doesn't support anything more. Contact Hyperoptic and ask for a fit for purpose router or buy something along these lines:

I found the same with Hyperoptic and it's because the WiFi router they provide can only reach speeds of around 450Mbps if I remember right.
I upgraded to https://www.amazon.co.uk/TP-LINK-Archer-C50-V3-AC1200/dp/B075PDLQ2Y and don't have the same issue any more.
Ridiculous that Hyperoptic supply a router that can't provide full line speed to a singular device over WiFi, even to their lowest tier package, but hope that helps.
