The recipe book in question, a great book with an emphasis on simple, easily acquired ingredients. I've had many soups from this book and they're all solid, easy recipes at the very least.

I'd suggest something like this, it's small and really quick to read the temperature of what you're cooking. There are some other types that have a handle and a fold out probe, and some have a magnet so it can attach to the fridge or stove.

Meh agree to disagree, I was literally looking for a creme brulee torch yesterday (my birthday is coming up and I've always wanted one! I'm an avid baker) and I looked at the features of a bunch, size and look and settled on the one I liked best. Started reading the reviews, read the 5-4s first, feeling good about my choice, then went to the 1's. They were all about the same "extremely dangerous do not order this!" Apparently this particular torch you can either get one that works great, orrrr get one that has an inconsistent flame that sputters and doesn't turn down and is a giant flame of destruction! (A few included videos) I definitely went and selected a more consistent less dangerous torch. 😬👌 Thanks 1 star reviewers!
She may like Japanese curries, they don't have coconut cream in them. You add your protein of choice, some fresh veg, liquid, and the curry blocks. It comes together quick, and it's tasty.
You absolutely can make your own seasonings, this is just a short cut for the picky eater test. If they eat the shortcut, I can spend the time + energy into making it the long way. Not all foods translate this way. A can of tamales -vs- fresh tamales is one. Hope she likes it 😁
You can use lactase drops on regular cream to convert the lactose sugar; before Lactaid pills came in drops were all you could get. I don’t see them at brick and mortar stores any more but you can get them on Amazon.
