>Are the stores with the green cross that blinks legit?
Yes, I think they are really everywhere within walking distance in the city, but if you need, you can also find them on the maps.
I've been out doing similar stuff a couple of times and I'm going again in a couple of weeks. Here's a couple of things that might help.
Get a Lifestraw water bottle - you can fill it from almost anywhere and have safe water. You won't need to rely on bottled water. There's usually plenty of wells around you can fill up from. This type - https://www.amazon.co.uk/dp/B01G7SQBPQ/ref=cm_sw_r_apan_i_MZ0E5TYZAYDHAYYNRBPT
A Hepatitis A vaccine is recommended before travelling.
Take some small fun things for kids - Soap Bubble kits, small colouring books, chocolate sweets and so on. They can transform a kid's day.
Make sure you have travel insurance that covers working abroad and know exactly what it covers. Be gently firm if you are asked to do work outside of the cover - for example, mine doesn't allow working over 3 metres high. The last time I was out there the guys wanted me to help re-roof a house and I had to decline it and explain why.
If you get bitten by any animal, treat it as a medical emergency, contact your insurer and insist you are taken to Chisinau hospital for a rabies jab, asap.
Get Google Translator on your phone and download Romanian. It will help a lot.
Moldavian people are amazing, friendly and generous, expect to make some great friends!
Didn't try from that side, so it's quite hard for me to say anything.
I read that recently Moldovan border officials appeared at the border (they come in through Ukraine) so you'd likely get the Moldovan entry stamp which wasn't the case until recently. If you don't and you plan to go further to Moldova, you need to register your entry somewhere in Chisinau - http://wikitravel.org/en/Transnistria#Entering_Moldova_through_Transnistria_from_Ukraine
I'd expect that border control might be harder from that side.

Nu intelegi cum se calculeaza gdp?
Ei folosesc datele despre populație de când aveam 3,6 milioane, evident că nu avem.
I quite like "the Moldovans" by Charles King, which is literally the only book about Moldovan history at my university's library. https://www.amazon.com/Moldovans-Romania-Politics-Culture-Publication/dp/081799792X
