I was planning to stop at a terraske along the route, because it doesn't seem such a long distance but with the offroad parts it easily takes 4-ish hours to complete I noticed.

Kept it hooked up to the charger last night and today but it's still only at 5.52V, we'll see what happens. Didn't plan on getting a new battery right now. I got this Suaoki from Amazon as I didn't want to spend 100EUR on a fancy charger and it got good reviews.
While looking for an app to track my rides I came across Fuelio. It doesn't do fancy things like lean angle etc, but it gives the average speed, distance, time and top speed. You can then export the track to GPX which is actually all I needed.
But that's actually not the main selling point of the app. That would be tracking (fuel) costs. Every time you fill up, you can enter the amount of fuel and the cost. The app will then calculate your average fuel consumption over time. You can also log your maintenance, insurance, and other costs. Painting a very clear picture on how much your motorcycle is costing you. Maybe that's something a lot of people prefer not to know, but it's very interesting to keep track of imho.
I've been trying out Calimoto lately. You can ask for a roundtrip, say how much km's and optionally a cardinal direction. You can also create your own tours with waypoints.
The free app is limited to Flanders only, but you can pay for premium and get more functionality.

I used the stocks for about 2 rides before i replaced them, i didn't like them much. I'm more for a clear view. The bar ends are convex, so i see a lot in them, practically no dead corners. I bought them cheap in some motoshop in Aalst when i saw them on display. I just wanted to try if it would work. They are very cheap and are found all over the internet. Just search for bar end mirrors There are more expensive options, but i imagine these things are the first to break off... You have to take in account that the bars for the V7 are threaded at the ends (god, why?). So you either have to use the screw of the bar end weight, or use another M6 bolt to fit them on.
About the veering to the right, do you have it at all speeds and how hard? For me it's quite hard, i let go and immediately it veers to the right and within 3 seconds i have to take hold again, otherwise i'll just ride of the road.
