Go for the Arm7 version, that should work. The rotating globe might not work, but that can be disabled. I do find it useful, especially when running console apps, yes it is buggy, but i didnt code it lol. Its a nice ui, that i think has got legs if done right.
Buying a refurbished Thinkpad and installing a security-focused distribution of Linux is the route I would personally take here. Depending on how much convenience you're willing to exchange for security, the distro will change. For the vast majority of security / privacy minded, I would recommend any major Linux distro with full disk encryption (Fedora is my personal choice, Pop!_OS and Mint are also good). If you need to remain completely secure and anonymous (e.g. whistleblower under authoritarian rule), Tails is made for this.

Geary just had a new release (40.0) that is supposed to be friendly for smaller screens. I haven't tried it myself, but it's available as a flatpak on flathub.

For Android, as mentioned there is GloDroid, however it is very far from ready for prime time, and it will not offer an actual Linux desktop experience.
In my opinion the most promising in terms of an experience similar to Android while offering a full Linux desktop will be Plasma Mobile.

But, performance wise, the Pinephone is unlikely to be sufficient for a desktop work environment that involves even limited multitasking.
I haven't tried it, but I think it might be doable. WhatsApp has a web client, so it's possible to use it through the browser (although you still need an Android phone or an emulator to sign into the account)
Now what is interesting is that Synapse (server for matrix/Riot.im) has a WhatsApp bridge: https://matrix.org/docs/guides/whatsapp-bridging-mautrix-whatsapp So you could use just Riot instead.
Encrypted calls over Voip and SMS sounds like you have a specific service in mind. Unless that service works on desktop Linux, I don’t see how it should work on the PinePhone.
So looks like Android may be a better way for you, just please go with https://lineage.microG.org or Graphene (which might not work if you need something resembling play services, and not /e/, who are mainly good at marketing.

The locked database isn't an permission error. It means that another process (typically the frontend of the package manager) is already accessing the package manager or it was interrupted while doing so. The website works... Okay-ish. As in, the audio is smooth and I get to see some frames every so often... So not really that okay. I'd definitly like to see general web performance improved in the future to help with that. Maybe?
I'd love to see a functional LBRY app running on a Linux phone as well. I'm sure there isn't much missing to get it up and running. When attempting to install the Desktop app (git) with yay it told me that an error occurred when making gconf. :(
If you purchase Sailfish OS ($50 ish) you can run android apps.
There is andbox but I think it's still highly experimental. Is essentially like running an android virtual machine for your android apps.
Your best bet is running signal through anbox.
I don't have a device but I did install the signal mobile app on a regular Linux machine using anbox.
Installing, connecting, and sending signal messages worked. Couldn't test SMS of course.

Keyboard bindings are definitely different and the default DWM stuff doesn't seem to be there when plugging a keyboard in, though it is configurable. I just haven't taken much time with the convergence stuff yet.
They've done quite a bit with just three buttons :D
Looks like it's not in stock right now, and it's pricey, but my job provided me with a nice Lenovo dock that's way more powerful than the one Pine ships with since it is also separately powered, and it comes with many more USB slots. It works perfect on the Pinephone.
I got one off Amazon that lets me charge the phone while I use it. I use it for my laptop also so it was worth it lol
