If she needs the light on to see where she's going, maybe a good compromise would be to use a small night light next to her bed. That wouldn't be very bright but it would be enough light for her to see where she's going.
Another idea is you could buy a bed tent for yourself. It gets very dark inside the tent. It comes in a variety of different sizes.

A mini-fridge is definitely the best option. Another option is buying a lockabox for the fridge. That will let you store some food and other small items inside. There are a lot of options to finely tune your search and rent the perfect space. Most ads have photos of the real place so you won´t encounter any nasty surprises when you finally reach your destination.
They won't listen until their shit gets stolen, so get a lock with a keypad and replace it. Most landlords will allow this switch. They're not that expensive and when the battery dies, a key will work.
