As for photos you uploaded, they should be tied to your account. I still see mine. My only headache was putting my presets back in the order I like them in as well as my tools. Thankfully I took screenshots of the order before I uninstalled. I've had to do this before when they botched the UI with unnecessary changes not too long ago. I had to roll back then too.
I mostly use journals to showcase groups of photos together, like a trip or a specific shoot. It’s fairly simple as far as layout and caption placement goes but it’s nice to create a story with like images, with or without text. You can see the few I have here.

I used the last one I backed up on my phone though (VSCO 71) because I had already extracted it. Since I've been burned before, I tend to back up apps I use daily before upgrading just in case. APK Mirror just has everything in one place.

I don't know of any major sites that claim the rights to your images, however most e g instagram, facebook maintain the right to use your data (photos and otherwise) for whatever they please.
