WordPress.com or .org? Can't find any direction as to the better one online

I love Wix as well! It just doesn't do what I need it to do for this site. For most info/lighter sites for my clients it is amazing.
I think the best solution for you will be to use Wordpress with a “portfolio” theme, which you can buy or get for free (depends on your requirements to design and functionality), follow this link to see examples - https://wordpress.com/themes/portfolio
The only thing you will need to do - is to spend some time installing and setting up wordpress, it is nothing crazy and you will find a lot of tutorials on youtube.
The benefits you will get with it:
- wordpress has several builder plugins which have a good UI and works the same as online builders like wix, weebly etc. Because you want to use your own unique domain, you need to host your website somewhere and “wordpress hosting” is one of the cheapest.
- further you can use wordpress for any needs even to create own online store
- you will be the owner of your site (files and database) and can move it to any hoster you wish any time
If you want to do everything from scratch, you can take a look at DIVI theme it has own builder and provides many options to create nice website.

You should not try to reinvent the wheel and develop it from scratch, you can cut costs a lot by using a shopify or woocommerce theme you like and just tweak the CSS or JS a bit. You can even skip a developer altogether and just spend $60 on a premium ECOM theme you like on a site like themeforest.com
If you want an exact clone of the site this actually makes it cheaper too though, your dev can download and copy their CSS and JS exactly but needs to rebuild backend.
