Bottom line with Beat Saber is that it is what you make of it.
My son constantly ridicules my play because he says I'm so "theatrical" (my word, not his - but I speak 13 year old and can translate). He sits there barely moving using Dinosaur Arms ... I make fun of him too.

You won't get in trouble, but it can be VERY VERY frustrating to spend a ton of time producing a video only to have it struck down, loaded with ads or you are forced to mute part of your medley because Song 4 of 6 is outlawed.
Vimeo has very loose copyright strikes. https://bittubers.com/ seems to be another possible home.
I've used both in the past to bypass the nonsense with youTube.
I'm currently trying out bittubers.com. It looks very promising, even though it doesn't pay much right now and it's in cryptocurrency. It's currently in beta so they are upgrading things constantly; It also features a very nice and essentially free VPN service which allows me to write this comment right now ;)
Probably not the answer you're expecting, but if you can't monetize your channel on youtube, you could give bittubers.com a try. It's currently in beta, but looks promising so far. Monetization is in cryptocurrency.
In my quest to also have a platform other than youtube, and after being kind of dissappointed with how things are on DTube, i have begun uploading my latest series on BitTubers (interesting concept with "airtime", will see how it goes).
I completed my Far Cry 4 series and have started live streaming Neverwinter Nights: Enhanced Edition on YouTube (what can i say, i just love old games!) and since my son seems to be enjoying the Lego Movie Videogame a lot lately, i also plan on making a longplay (i.e. non commentated) series out of it.
on the old platform (bit.tube) transcoding is done in the background, you have to wait a while before your videos are published. It says so after you upload them, you receive an email as well.

We prefer slow growth with quality content than opening the floodgates for bots and spam, this is what happened with bit.tube and we are prepared for it this time.
