Easiest answer, you are 2 minutes away from: if you have a Windows computer, use Windows Media Center (built in, get to it from the start menu) and the MyMovies plug in: http://www.mymovies.dk/
Plex has a ton of advantages, especially if you want to view the same content multiple ways in your house, but requires a little more setup. Not a problem if you are the least bit technical though. XBMC is very nice too, and a favorite of tinkerers.

Free software to keep track of your movies would be MyMovies.
I use My Movies. I love scanning barcodes to get my dvds into my collection, and being able to "check out" movies to friends so I know who has what. I also like how it automatically syncs with my computer.

Most of us prefer to use http://www.mymovies.dk/ for our online categorizing. There's also a fantastic Smart Phone app available that allows you to scan in your entire collection.
I use Binnerup's My Movie Collection. I have an Android device, and I can use the camera on the phone to scan the barcodes of DVDs I add to my collection, and imports all the information from IMDB. It syncs up with the computer version, and then an online web address for your collection that you can give out to people. The app also keeps track of and discs you loan to people, if you do that sort of thing.
I have almost 800 DVDs, and it is great. The free version of the app lets you scan in 50 I think, just to give you a flavor of what the app is like.
I don't see the difference except for movie streaming from your own server? For cataloging, I don't see a reason to upgrade.

You really are at the point in your collection that it is time to have an app like MyMovies for iPhone or Android. Totally worth it, turns your phone into a barcode scanner that you scan all your movies into a collection that is viewable online
MyMovies does an excellent job of keeping my library of over 250 movies in line. It automatically downloads metadata and artwork and will list out everything in a filterable, sortable database.

Well, if you want/need to stick with WMC, change your Shark settings back to Haali/FFDShow from the LAV defaults. But you might still want to look at XBMC/Plex as a secondary system -- record and watch TV in WMC, do everything else in XBMC/Plex. I will say that my setup is similar to yours (I still record TV, and I use CableCard so switching to non-WMC isn't really any option) and I don't use XBMC/Plex. Instead, I use Shark/Haali/FFDShow and manage media with My Movies.
You could try Windows 7 and both the MyTV (http://mytv.senseitweb.com) and MyMovies (http://www.mymovies.dk)
They are both easy to set up, and stream great to the 360 with mkvs.
MyTV hasn't been in development for a while but works great. MyMovies is also incorporating a television plugin as well but it is fairly new so they are still getting the kinks worked out.

What currently works shouldn't stop working, and I guarantee you there are many of us who will stick with 7 or 8.1 indefinitely until WMC comes back or a true viable option appears (SD's kickstarter is interesting, but too much vaporware-ish for my tastes right now; plus, I don't trust any company that uses Kickstarter ...). So it's still a safe bet to buy InfiniTV products for 7/8.1, at least IMHO.
Also, Ceton's cards work in more than just WMC. They're supported in backends like NextPVR and MythTV, for example (obviously minus the copy protected channels), and I don't see any technical reason why they wouldn't be supported by SD's software. CableCard interfaces are pretty standardized, so unless SD's relying on their DLNA streams the Ceton cards should just be plug and play. And if they are relying on DLNA (which would be a bad idea, IMHO, because IIRC the HDHRs are transcoding MPEG2 -> H264 on the DLNA interface which would be an unfortunate loss in quality for mainline DVR scenarios), that's also a standard interface that Ceton could easily bang out support for.
I'm not really sure how much Ceton was invested in Q (that was Windows Home Server; there was a very brief period of time where Microsoft toyed with incorporating WMC into the v2/2011 version, but that was scrapped very early in the process and not something that Ceton would've ever dealt with). And I believe the dev you're thinking of was Mikinho, maker of Yammm, not Binnerup Consult, the guys behind My Movies. Yammm is the backend for the My Media Center app from Ceton.
For movies I've used My Movies. Adding all your movies is a pain, easier if you have the retail boxes with UPC codes, but it works pretty well. If you mean ISOs of other things I can't help.
The MyMovies (http://www.mymovies.dk/) program can solve at least part of that issue, and when paired with Windows Media Center has a bonus effect of allowing you to watch movies from your Xbox 360 (as a Windows Media Extender). I don't know if the MyMovies Collection Management screen allows you to play the movies without Media Center, but the screen WILL produce metadata that you can use in other programs aside from Media Center, like XBMC etc.
As far as I know, the only way to get DVR function with encrypted digital cable channels is with Microsoft Media Center. Ceton makes a 4 tuner digital tuner card that accepts a cable card that you rent from your provider.
For the movie collection, there's the My Movies plugin for media center that works really well. In fact I consider this a killer app, and it's kept me using Media Center for these past few years. I would have abandoned it by now without My Movies.
I've used Media Center since 2005, and I have a love/hate relationship with it. As far as I'm concerned, there's no better user interface, especially the DVR function. It's a great product that has a few stubborn bugs that Microsoft just doesn't seem to want to fix. It seems to me that Microsoft has abandoned it for the PC, perhaps to concentrate on Windows 8 and the Xbox. It won't come standard with Windows 8.
I don't see any activity on it from the programmer community anymore either. There used to be people writing plugins all the time, now only My Movies is still supporting it. XBMC on the other hand, has tons of support.
Like you, I want an all-in-one box for DVR, Movies, Music, so I feel I'm stuck with Media Center until somebody else comes out with support for recording encrypted digital cable. I hear there's a group working on this for XBMC, but last time I checked, they had a long way to go for full DVR support.
I use windows Media Center and the My Movies Plugin. My DVDs are all ripped to Video_ts folders. I have a dedicated HTPC connected to my LCD TV in my living room, but you could use an Xbox 360. Everything works smoothly with the Media Center remote, and I don't allow a keyboard and mouse in the living room.

I love WHS. Nightly full PC backups mean I don't have to worry so much about my computer failing on me, so long as the same event didn't take out my server.
Bonus: http://www.mymovies.dk/ works wonderfully with WMC and other media players, including XBox, PS3, and XBMC. The interface with WMC, however, is pristine.
I'm using a combination of Windows Media Center and Arcsoft Total Media Theatre 5 to play Blu-Rays. Windows Media Center can be controlled by any RC6-type IR device, including most generic IR remotes. I'm using an external IR sensor with an HP Media Center remote so that I could set the receiver down by the TV. For playing other types of media, TMT5 can also handle that along with something like MyMovies for organizational purposes. My HTPC is also going to be handling an HDHomeRun Prime CableCARD tuner for recording shows and such, which is the reason for my heavy usage of Windows Media Center.
I use My Movies. It is amazing. It fully integrates with Windows Media Center. You can search for DVD's using the bar code or title. It has the ability to use the webcam to scan barcodes but most people haven't had much luck with getting that to work properly. Don't let that detract though. This is a very prolific tool that has A LOT of great features. It follows a similar model as DVD Profiler that the basics are included for free, but the more advnaced enhancements cost points. Points can be purchased or users can earn points by filling in missing data for the My Movies web service. You also get to export your collection to their webservice for free (they host it). Here is mine.
The community if very active and the developer is constantly updating it and added new features. I have it hosted on my Windows Home Server with AnyDVD on it. So now, when I buy a new DVD, I drop it into my server, it makes an AVI of the main feature, adds it to my catalog and spits out the DVD when it is done. It is great stuff.
