I use ByteCopy rip blurays, here is my workflow to get soft Subs, Rip the bluray to h.264 MP4, and extract srt Subs from bluray. Then Put the MP4 into subler, search all the metadata/artwork within subler so that it's all filled out, then drag the .srt file and make sure it's the language you are looking for then save & optimize, add to the media player for playback.

If you want to compress it/save space, choose audio stream, MKV is the standard. No menus. Have to do the extra features as separate files. MKV has chapter support and alternate endings.
MT2S are the video files on the bluray. You could copy them to your hard drive for untouched video and audio... cannot embed subtitles, different audio, chapters, or endings as far as I know.
My m2ts files are simply copied from original Blu-ray disks (with decryption being handled by Pavtube ByteCopy ), I toyed with the idea of giving up on MKV in favour of M2TS files. Once I have remuxed to MKV. I dont down convert anything, all audio and video streams are left uncompressed. The reason I remux to MKV that it seems to perform widely than m2ts.

I guess that your desktop can't read Blu-ray disc. You need to get an external Blu-ray drive. Then you can use VLC to play Blu-ray video on your desktop. Or other Blu-ray video players.

Most of commercial DVD discs have encryption such as CSS and Handbrake doesn’t have decryption library to bypass DVD copyright protection. You mean your bluray player can play the disc but stoped, It's not common I havn't met. More generally, the disc can't be played,not stoped. It can't be play usually because the disc protection/region code, it's easy to remove the protection by Pavtube ByteCopy.
