"I am ditching mail.app" is something I've said to myself many times, but I keep coming back to it. Sparrow, though no longer maintained, isn't bad. Airmail is also okay, but a little buggy and perhaps bloated with features I will never, ever use. Postbox also exists. None of these apps have stopped me from coming back to Mail.app, though.
Mail.app also has features that the others don't, like "VIP" support, which syncs to my iPad/iPhone. That's something that I didn't really know I used until it was gone.
Yes. I've been through periods of hating it, but at the moment it's stable. I'd hate to give up data detectors, and good OS X Address Book integration is a must-have for me, so there aren't that many other options. Postbox is the one I'll try next time Mail pisses me off.
Sparrow is still available in the App Store, and has even had an update since the Google buyout. From the reviews, I see some people are having some problems with the lastest version, but I've never had any trouble. Still my favourite mail client by a country mile... I couldn't live without the Gmail keyboard shortcuts.
Edit: I've heard good things about Postbox, if you're looking for something else.
A little late to the party, but I'm surprised there's no love for Postbox. More powerful than Sparrow, an excellent Gmail client (archives, labels, stars, etc), better search, filtering, extensible (it's built on Thunderbird), solid Applescript support, and it's sexy.
I have been using Postbox (http://www.postbox-inc.com/) for a year or so now. It's a decent client. (I gave up on Apple Mail a few years back and then separated my personal accounts into Airmail 1.x and my work emails into Postbox.)
If you have complex emailing needs, I recommend Postbox over Mail. Postbox fully understands that you have an archive folder, and you can even set an archive folder for email providers other than gmail.
For Gmail, use the web client.
There is also Postbox, which is similar to Mail.app in its interface, but more powerful. On the other end of the spectrum is Unibox (available on the Mac App Store) which looks a lot like the messages app and shows emails as in a conversational manner sorted by contact. Both have their own appeal, and it depends on how you work with email to figure out what you need.
Not sure if Postbox fits your needs, but it's also a popular client. You may be able to bend Thunderbird to do what you want as well.
Get Postbox. It will bug you if you use any variation of the word "attach" and there's no attachment.

Sorry if this isn't the place for this since it isn't free, but has anyone tried Postbox? I've been wondering if it's worth the $10 to switch from Thunderbird. (I'm poor.)
If you had an icon theme where all your icons were monochrome, there's no reason this couldn't be made monochrome too. The shape of it is intended to be recognisable even when the blue isn't. It's what would make it recognisable to people with all types of colour blindness, or on a monochrome display.
It's designed to be blue, but when the context means that it isn't (and using it in a monochrome icon theme is one such context), that's ok too.
Postbox has that as well. I tried it back when it came out, I really wasn't a fan. So rarely do you just want to browse a random gallery of old attachments... I've actually never wanted to do this.
I understand Outlook is a decent Outlook replacement if you can use it with Exchange.
Personally, I use Postbox. Not perfect, but I think it's the best of a small bunch.
Zimbra Desktop should have been the Outlook killer in enterprise. Unfortunately it sucks bad.
