Rift has a mic built in it.
There are also plenty of programs for voice recognition... I might try this one out myself.

I was wondering if you have tried using voice commands for the abilities instead of the mouth stick?
There are existing programs that let you map voice commands to certain key presses like https://www.voicebot.net/. That way the voice commands are compatible with every game.
Now I haven't tried it myself, but people generally seem to be quite happy with how it works.
There's an app called VoiceBot (I got my license on Steam), which you can configure to perform certain tasks using only voice commands. It's very easy to use and configure. In fact, you can use it to call for dice rolls using Discord and the Sidekick bot.
You need to have Discord open. You can even create a new server, just for you, and install the Sidekick bot on it. What I did to test it was to create a command on VoiceBot, so that every time I called for "Roll 1d20", VoiceBot typed "/r 1d20" and then pressed enter. Therefore, when I had Discord open, on the chat Window as if I were to type, whenever I called for "Roll 1d20", I got the roll by using just my voice!
There are other bots for Discord that help you create your own personalized commands that could help you calculate other aspects of an RPG game. I'm guessing that this, plus a speech-to-text software, and your boss could easily play an RPG on his own, and roll any dice!
My wife plays almost exclusively using an Xbox controller. We use Pinnacle Game Profiler because it is highly customizable and works with all software, but Steam is almost as good these days.
Here is our layout, but you'll probably want to use something different.
If you haven't looked into it already, voice control software like VoiceBot can also be really handy for triggering less urgent commands like "Inventory", "Map", or "Skimmer".

If using his hands are difficult, you might look into a couple of tools like Voicebot or VoiceAttack. You can set up strings of commands from a single word or phrase. I've made a couple friends who are severely disabled due to conditions like Muscular Dystrophy, who are able to do pretty well even in fast-paced games like Rocket League, Overwatch, even Pubg. You would never guess their situation from how they play.
Yep, you can actually have it say whatever you want. When making a macro, under the actions tab, just add 'Voice to Text' option and type whatever you want it to say. So for missiles, you can have it, after saying 'Fire Missile'
1)'Press and release middle mouse button'
2)Voice to Text: "See Ya Fool"
