If you go to settings > display, is "When device is rotated" set to "Rotate the contents of the screen"?
Maybe try an app like Bubble Level to re-calibrate.
I noticed you mentioned your glass table is very even. An even/flat surface and a level one are two different things. It sound like your table is not level and its angle is causing the adhesive to run off the top. Either use a carpenter's level if you have one or download a phone app bubble level app and put cardboard or something under the feet of your table until bubble is in the middle.

When you're done with your mirror finish, put your phone on the stone holder and write down the actual angle.
You can then easily re-create it.
Sounds like you may need to calibrate your gyro in your phone. Bubble Level on the android play store is a good little tool for that. It will show you IF it's out of wack, and help you calibrate it if it is.
