Cyberdust: Great to follow significant figures and get interesting info. Often promoted by Mark Cuban (+blogmaverick on Cyberdust).

It's an app that deletes your sent messages and photos. No trace of them whatsoever. Much more friendly user experience and feel than Snapchat and allows you to follow friends, topics of interests, celebs, etc.
I've completely switched over to it as my main form of communication. I highly recommend it

At best you would have a return receipt that at least the sender could keep -- the problem that would need solving is how to avoid forged receipts. Though see below.
Some email systems have archiving in which case you might use Delta Chat to get a chat/IM like experience. You have to extend trust though, to the operator of the archive that they won't delete anything. In extreme situations such archiving is to write-only media, but even then you have to trust that the media (and the log) isn't easily destroyed.
Blockchain seems to provide what's needed, where the messages are stored where everyone (or at least many people) can see the message and will sign an attestation to that effect also placed on the chain. The issue is you can't tell if one copy of the chain has been altered without comparing with others, which might be trivial or annoying even impossible. Anyway, such "DApps" exist, though whether they'd fit your needs I cannot say, like Beechat, Dust, E-Chat, and Status -- I don't use any of these, I just know they exist.
