Check out Hexy Launcher. It creates a grid of hexagonal icons categorised by icon colours. Certainly different compared to the other options here so far
> You can also just swipe down from any of the launcher screens in the MS launcher and hit q.
Good tip!. It's just a bit slower than FastKey. The keyboard doesn't take long to display, but it's an additional swipe instead of just hitting the key I want.
> I think few launchers are doing what fastkey does because I know that at least for myself, I wouldn't want a significant portion of my homescreen always having a keyboard on it.
I get that. A couple of years ago I realized that launching apps was the most important thing for me, so I found a launcher that did it the best. I tried dozens of launchers before I found it. The most interesting one was probably Hexy Launcher by Swiftkey.
How many icons do you want on the home screen? I'm asking because besides grid size, you can also look into changing the device DPI, resizing the icons, or use a launcher that doesn't use the grid system, such as Hexy Launcher or TVLauncher
The main UI you interact with is the launcher and there are lots of good and interesting ones available that innovate.
And we have two called Edge Launcher that take a similar idea, but do different things with it:
While the rest of the UI such as the notification bar and settings don't change except when modified by OEMs, changing launchers can give your phone a whole new look and feel. I think it's sad that everyone sticks to basic launchers with app drawers when there are so many other options available.
Oddly enough, I think the Swiftkey development team is the best answer for you.

There's also this homescreen by the SwiftKey people: https://play.google.com/store/apps/details?id=com.swiftkey.hexy
Hexy launcher comes to mind but it's a rather unconventional launcher. https://play.google.com/store/apps/details?id=com.swiftkey.hexy
It's going to be buried but that's pretty much like Hexy Launcher - organizing apps by their color
