I use iSyncr to sync my iTunes playlists. The synced playlists stay in the same order on the phone. I have tried several apps and methods to sync iTunes playlists. This app is by far the best and one of the fastest ways to sync playlists. I have over 90 smart playlists with 1,100+ songs and it's very fast and reliable. I even setup a Tasker task were my playlists are synced whenever I charge my phone on my night stand.
I'm only experiencing a small issue that only seems to happen with smart playlists. If I change the sort order in iTunes, the changes aren't being reflected on my phone. However, I think this isn't really an issue with the app because it seems like iTunes always appends new songs to the end of the smart playlist.
I know a ton about syncing music with an Android phone, and I've tried pretty much everything.
Your major options of a desktop client to sync with Android are: iTunes, Google Play Music, MusicBee
Personally, I prefer MusicBee because the desktop client is super lightweight and customizable. Syncs with my Android great. Fair warning: it can get a little complicated.
Seeing as you are coming from Apple, you may want to continue using iTunes and that's totally doable. Download iSyncr. Yes it is a paid app, but it's totally worth it. There are tons of features like syncing wirelessly. You can even set it to sync while you are asleep so you never have to consciously sync your device again.

I still use iTunes on PC (*sigh* I know, boys) and I've used iSyncr on every Android device I've ever owned. It's pretty rad.
It syncs by playlist, so I select not only all of the real playlists I want on my phone, but then also one playlist ("Mobile Sync" or whatever you want to call it) that includes all of the tracks I want synced that aren't otherwise on a playlist. It works pretty nicely for my needs and was doing WiFi syncing long before you could natively WiFi sync in iTunes!
EDIT: Holy shit it's $9.99 now? Hm. I like it very very much but I'm not positive it's worth that price right now without knowing the rest of the market a little bit better.

I've always used iTunes alongside an app called iSyncr to sort out and sync my music on both my phone and desktop, but I'm getting really tired of iTunes.
Can someone suggest a better, faster desktop music organiser/player than iTunes that will allow me to sync my music across without hassle?
All I need it to do is the ability to change info about the songs (stuff like album covers, artists etc), create playlists and play music.
Edit: I'd like to keep using the native music player on Android, so I would prefer to not have to use someone else's app, just someone else's media player/organiser. Is MediaMonkey any good?

I could never stand iTunes on the desktop but there are Android solutions for syncing with it, including smart playlists. How well they work I can't tell you though.

If you already have music in iTunes and have created playlists etc, then the best app to sync music to your phone is iSyncr
I migrated my music collection from an iPod Touch my phone using the combination of iSyncr(https://play.google.com/store/apps/details?id=com.jrtstudio.iSyncr) and Rocket Player (https://play.google.com/store/apps/details?id=com.jrtstudio.AnotherMusicPlayer).
iSyncr is good because it lets you both import all of your i-Tunes playlists and all meta-data including ratings and play-counts to your android and it allows you to continually sync the play counts and ratings from your phone back into iTunes.
Rocket Player is the music playing app made by the same company and so far it has the most features that I have found. It has different tabs for artist, album, album\artist, songs, genres and playlists and then you can have several sort options for these including year. My absolute favorite feature though is the ability to make Live Lists on you phone. These are essentially the equivalent to the smart playlists in iTunes but you can create them on the phone. For example if I want to listen to my favorite Beastie Boys songs, I can make a playlist for artist='Beastie Boys' and rating >4 stars. Both of these apps have demo versions so you can try them out for free,
Music downloaded from iTunes is no longer locked down. Songs are formatted as unlocked AAC files that can be played on pretty much any device. Now if you have some really old music from iTunes (circa 2009) it's possible those files can't be played by the S6.
Now you won't be able to use iTunes to sync the songs to your phone unless you use a syncing utility like iSyncr (https://play.google.com/store/apps/details?id=com.jrtstudio.iSyncr).
The great thing about Android though is that you don't need to use iTunes. You can plug the phone into your computer via USB and copy the songs over like moving files onto a flash drive.There should be a music folder already on the phone. You can copy the files there.
Alternatively, you may want to use Google Play Music. It will copy your music from your computer to the cloud, and make it accessible from all your devices. If you are going to be in an area with no connection, you can tell it to download the files to your phone beforehand.
I did manage to find a 5.18.06 version of Rocket Player (the version before they reintroduced a bug that causes the app to constantly scan for new songs), but I'm running Adguard so I'm not actually sure whether or not that version is littered with ads like the new one. On that note, I just have to say: I can't even begin to understand why people tolerate ads in a non-streaming music player.
As for iSyncr, if you're lucky enough to have purchased the original version, that should work. Here's a URL to the original, copied from the app listing on Google Play, though I'm not sure the URL is functional because it always directs to a "not found" error. Here's a screenshot of the main page, which I found via my transaction history. I wasn't able to find a way to get new iSyncr working, though, and have moved on to using MusicBee + GoneMad Music Player / PowerAmp. My prediction is that it's just a matter of time before Rocket Player and iSyncr are broken entirely, and that Muma Studios purchased JRT's work simply as a means to make a quick buck. They have no development history that I can find, and their response to my emailing them about the "scanning for music" bug revealed pretty clearly that they have no idea what they're talking about:

I really suggest you to use the wifi sync instead of usb - it's way more reliable.
iSyncr also does sync the play count with your iTunes library. It costs 6 bucks but let me tell you it is worth it!!
Just buy any micro sd card capacity that suits you and you're good to go.
Edit: As for a media player to use:
I use Shuttle+ (free version also available) as it supports sorting by album artist. You could also use Google Play music and turn on the toggle for offline music only. Retro music is the most beautiful player out there but sorting by album artist doesn't work properly. And there is Rocket Player (from the guys that make iSyncr). It's has a lot - I mean a looooot functions. But Somehow I just don't like it but it's really good.

While I agree the most with /u/bdschuler's recommendation to use MediaMonkey, if you don't want to migrate your library for whatever reason, iSyncr works great for syncing with your iTunes library. I've used it for years because I stuck with iTunes for some reason. Playlists for sure work fine (playlist syncing is iSyncr's core function), and Loved tracks I think. Requires installing a support program on your computer.
It didn't always used to be $9.99 is the only downside. That's kind of steep :\ I know there's a trial version though so maybe try it out there first.
I've been wanting to get off of iTunes FOREVER since I no longer use my iPod Classic, but iSyncr mentioned by another in the thread is good. I wish it worked with iTunes directly instead of having to run a separate "server" app on my machine to negotiate the syncing, but I haven't had many issues with it.
iSyncr works pretty well for transferring iTunes playlists the to Android phones/tablets. I'm kinda the opposite case - used to have an iPhone (though still use iTunes for my music) but am happier after switching to Android.

I used the app iSyncr pro because I have multiple smart playlists. At first I spent a lot of time manually transferring over my songs and playlists. It worked but when I add new music, I would have to manually use USB to transfer the songs and added them to the appropriate smart playlist. With the app I can sync my entire iTunes library over wifi or USB.
In the app settings you can change the music's directory instead of the default folder 'syncr'.
I'm using iSyncr which requires a desktop companion app to sync my music from iTunes to my phone.
Using it's WiFi sync works very well and I currently have 19 GB / 2700 tracks synced to my phone. It will only sync playlists over WiFi so you will have to make a new or dedicated playlist for any songs that's not in an existing playlist you want to sync though. I just have a single playlist called "Android Sync" that I add music to whenever I have something I want to sync to my phone.
It will also track play counts and sync that back to iTunes if it's something you care for.
Note that iSyncr is not a music player. It will only sync your songs and playlists to a folder.
You install the iSyncr app to your computer which then connects to your iTunes. Wifi sync you choose the playlists and it syncs to your phone. You don't need to use rocket player to play music. I use a different app.

My favorite solution is to use iSyncr (holy shit it costs $9.99 nowadays??) to sync a series of managed playlists to my phone, then use whatever music player app I'd like (currently a fan of GoneMad Music Player but this part is entirely up to you once you try out different ones).
iSyncr has always been super reliable and synced music and all of my metadata perfectly. I'm just kind of shocked at how high the pricetag is now. Maybe give the free trial version a shot to make sure it meets your needs.

iSyncr allows you to syncronize your iTunes library with any Android device.
I switched from iOS to Android too and i miss the seamless iTunes music "experience" a lot.
What i found is iSyncr. You have the small app on the Android device, and the sync companion on your computer (Windows/Mac). Then it will read your iTunes library and sync it to a folder on your Android device, and it will convert the iTunes playlists to a "Android format" sort of. Then you can use a common music player app which will read the music from that folder and you are good to go. Almost the same as with iTunes + iOS device.
I use the Rocket Music player app because its from the same company as the iSyncr tool, but any other app which lets you pick the source folder should work too.

If you just want to sync the music files themselves, without any playlists, then i would recommend FolderSync. Can be set up very easily to sync from a shared network folder, FTP, or most cloud services to sync to your phone's storage.
If you are interested in an app that auto-syncs, this one has a good reputation. Have not used it myself, though.
I recommend iSyncr, it transfers all my songs and playlists wirelessly as if it were an iPhone. Well worth its price as it saves so much time.
