Spheriod has around 15,000 icons. 88 of my 96 apps are themed.
Alternatively find an icon pack with really good icon masking and then even if it's lacking in icons, you won't be able to tell. I like Flat Circle .
Spheroid Icon has 10,648 according to MicroPacks app. I've been using it for a while and it covers about 71% of mine!

This one is fantastic and has over 6700 icons.
First of all. Use Nova launcher to get rid of default miui launcher and use good icon pack. (I am using spheriod, It has 12k+ round icons. You can use icon pack of your choice.)
Themes: Nexus Blue Pro/ Android Oreo Pro / Oxygen 999.
Use any one of them or use combination of various themes. (You can customise it from themes > settings > customise theme).
- For stock android status bar: Material Notification Shade
Disable internet access of this app. So that you don't have to worry about privacy. To disable internet access, go to security app > data usage > restrict data usage > disable mobile data & wifi for material notification shade. You can also restrict data from app info page of material notification shade.
Some suggestions:
Go to wiki page of r/xiaomi and look for miui debloater. It will link you to Xiaomi ADB tools. Download last one. (From u/Saki_Eu). Uninstall miui bloatware like, "Cleaner", "Apps", "Mi Video", Default browser app and other bloatware app that you don't want to keep on your phone. Link for Xiaomi ADB tools. MIUI debloater option is very simple to use. Hardly takes 1 minutes to uninstall default miui apps.
Disable permissions from some miui system apps like analytics, msa etc. IIRC those are for analytics/tracking. It's better to not give any permission access to those crap apps. You can also disable that facebook app manager. (Something like that)
If you want to use latest Android versions. Consider flashing a custom ROM. Wait for stable ROMs. Until then do things that I mentioned above. You will get pretty good experience.
About Notifications. You can also enable/disable autostart for individual apps from security app > manage apps > Permissions > Autostart.
Many default miui apps show ads. For example, download app, launcher app, file explorer etc. Open settings of those apps. There will be an option to disable it. It should be something like "receive recommendations". Turn off that option to stop ads.
