I'm pretty sure ViewRanger does all of this, even in the free version. It uploads your location at a time interval of your choosing, you can view it in real time online, and it will keep recording offline. Online viewing requires a PIN to access.
Ciao,
Sounds good! Would it be possible to add support for non-workout apps like Viewranger or standalone maps apps like this one?

Caminhadas: Vais estar 4 dias, vou recomendar 3 caminhadas, podes escolher 2 talvez.
Recomendo avidamente! Informação detalhada (incluindo waypoints GPS) aqui.
Minas dos Carris: O nome parece tirado do Lord of the Rings... e é quase :P Este é um clássico!

Not exactly a simple app but ViewRanger is pretty good. It has a record track feature with Android wear support. https://play.google.com/store/apps/details?id=com.augmentra.viewranger.android
It looks like that will work. You just need to do the gpx download in the browser.
Komoot works on the Suunto 7 - but its a case of komoot working with the suunto app on your phone to import the route onto your suunto watch. Komoot works on these smartwatches (see attached link): https://www.komoot.com/smartwatches
The good news is that there is a decent Komoot alternative that does work on wear os: ViewRanger: https://www.viewranger.com/en-gb https://play.google.com/store/apps/details?id=com.augmentra.viewranger.android&hl=en_GB&gl=US
Not used since got my Suunto 7 and believe they have now consolidated with another app/brand, so not sure how it currently works (but am sure there must be a trail/free options to check).
Not quite sure about your post, as there seems to be quite a lot going on that are all different issues.
Maps when hiking -
Best option is the offline maps on the watch via the suunto app, as designed to take use of the low power coprocessor. Only issue is it only stores the area you select so you have to set this up prior to going and sync when watch on charger, and if you want to do this just before or during you would need your phone, create route on it and sync it across to the watch (doesn't take long - if you have Kamoot you can also do this on Kamoot and get auto navigation). Its one of the easiest methods I have seen.
Note if you are connected to your phone while hiking, and you use the map screen it will update via your phone connection and will always show you a breadcrumb trail.
GMaps - but would need your phone - basically repeats what you have on your phone to your watch. Best option is to start navigation on phone and then pull up naotification shade on watch - can get it in either text or if you use Open GMaps option looks just like your phone.
3rd party option of which I like viewranger the best (see the app on the playstore for more details). https://play.google.com/store/apps/details?id=com.augmentra.viewranger.android

Breadcrumb trail post activity - any outdoor tracking activity that you use (walking, hiking, running, cycling etc) uses GPS and will show you a breadcrumb map on your phone in the suunto app (ignore GFit app - just use the Suunto app).

Android Auto Connnection -
Assume this isn't the phones android auto app? but rather the cars built in android auto.
If using android auto on your phone, it seems to block all connectivity to your watch - which sort of makes sense when you think about - no distractions. Remember your phone drives what is sent to the watch (except for calendar notifications, reminders and alarms which are set up in the watch - hence why you may get dual calendar / reminder notifications depending on your wear os phone app notiifcation settings).
What phone are you using, as I haven't had an issue in terms of watch connectiivity and phone being able to connect to other bluetooth devices.

General connectivity issues;
Android has a habit of killing off apps running in the background, and some manufacturers are worse than others at how they tweak this action. So your best bet to ensure no connectivity issues are to set your phone's (I am assuming its and android, if its and iPhone I believe it has something similar, but may explain more about some of android car and watch issues) wear os and suunto app to not be optimised. In all android phones long press on your wear os app and suunto app to get app options - there should be an "app info" option - press on that to get app details i.e. notifications, permissions, storage etc. One of these options should be Battery optimisation or Memory management something along those lines. OnePlus (my phone) calls it Battery Optimisation. You should get 3 options - a system option, an option that restricts activity and option that doesn't restrict at all i..e OnePlus calls them - Intelligent Control / Optimise / Don't Optimise. Select the option that says Don't Optimise. This will now ensure that your wear os and suunto app will remain running in the background - shouldn't impact battery life; and thus ensure your bluetooth connection remains stable.

If the activity you are using doesn't have a breadcrumb map (would be surprised as walking / hiking from what I can remember do/ if they don't you can always go into the suunto app on your phone and customise your activity so that it does. It is probably worth doing this so that you customize your data fields to what you want i..e I prefer using a data field for the time, as I find the standard time to small to see when I just want to glance at the watch.

Manual -
I suspect that any manual that came with the watch may be out of date. I tend to use this wonderful resource when I am not sure of how to do something:
https://www.suunto.com/en-gb/Support/Product-support/suunto_7/suunto_7/
Would also suggest joining and becomming a member of the suunto forums as there are a lot of guys who are super helpful on there, inculding the original beta testers of the watch who have probably forgotten more about it than we have learnt about it.
ViewRanger might be what you're looking for https://play.google.com/store/apps/details?id=com.augmentra.viewranger.android
