I can confirm that this update does uninstall a bunch of bloat. I use an app called Wear App Manager ( <strong>https://play.google.com/store/apps/details?id=com.wearappmanager</strong>. It tells you what uninstalls and installed in the background on your watch too. Also, tells you when the Play Store and Play Services has been updated too. You need to download that part too from your watch) Once the System Update finished it started uninstalling a bunch of apps in the background. What type of apps, I don't know and still trying to find out but it did uninstall about 11 things. Seems much better so far.
For utilitarian use - I use "Wear App Manager" from Udell Enterprises - as with the case with most Wear OS apps, you get an update to it, then have to tap on the notification, wait for the App store to load, then manually update the app.
This app does all of this from your phone and pushes the updated app to your watch seamlessly. It also allows you to seamlessly push the Wear OS version of a newly downloaded app to your watch in the background. Well worth the supporting of the app.

I like Wear App Manager for seeing app/memory use.
Wear App Manager is great for seeing exactly what's on the watch and removing apps. I paid for it for the same reasons you stated, I had garbage apps that wouldn't uninstall and this really helped!

i also learned there is a notification on the watch when you first install the app on your phone, it asks if you want to install it on watch also

You will get a system notification on your watch when an app is installed on the watch. Otherwise, it's likely a phone app that uses notifications on the watch, not an installed app. Look at the screen shots on the play store - if it's an android wear-compatible app, it will show you how it looks on the watch. Simple rectangles of text are likely just notifications.
This is $1 well spent: wear app manager. You'll be informed when apps install, update, and get removed. Lets you look on your phone at all the details of the wear apps on your watch. Very good with 1.5, even better when you get 2.0.

It depends on what type the watchface is. They can be .watch or .face for watchmaker and facer. I have a space one that ends in .spacey. I don't think they are actually .apk files.
Maybe try downloading an app that shows your watch storage and lets you manage it on your phone like wear app manager:
