I managed to fix it last night just before I left work!
I was doing more research into the issue and discovered similar issues in the past which were related to dodgy 2.4ghz and 5ghz frequencies (around Marshmallow era). Back then there was the ability to force Android devices to force use either frequency, but this got removed with Nougat.
Fortunately, there's an app on the Play Store I came across called WiFi Manager which allows you to identify the individual channels of a wifi signal and set preference to a particular channel. I forced my phone to connect to channel 1 of my work wifi (which is a 2.4ghz frequency, as opposed to the 5ghz it was trying to connect to before) and it appears to have fixed the issue! I'll be checking again today to see if it's fixed the issue for good.

EDIT: Just got into work and can confirm that the forced 2.4ghz channel has been retained, and wifi is working flawlessly.

I'm not sure if it's possible with Tasker.
As an alternative you could try WiFi Manager to autoswitch networks based on dbM levels. It also can prioritize 5 GHz networks.
ahh so you are saying if the building has network A on one side of the building, and network B on the other side, You want it to hand off when Network B's signal is better than Network A's signal. I don't think IFTTT can do that, but a quick google search brought up this
In the settings there is something called 'Switch to best network'
Use the WiFi Manager app
Even though it's not a plugin it has widgets and all kinds of functionalitiy that can be controlled using AutoInput for Tasker. If you can click on it somewhere, chance are AutoInput can too.
As WiFi Manager lets you setup custom toggles, it should be easy to toggle between the two networks you mentioned.
Right now I'm trying this way: 1. Forget all the wifi network (5/2.4) in Android settings app 2. Use this app to reconnect back
The connection seems stable, I'll be back in a few days to report results.

I used to use it when I had 2 different SSIDs in the house
• "Best network" to switch between different networks you may have around the house or office (off by default, enable in app settings);
I don't think Tasker can CONNECT to a specific network, and switch etc.
It CAN detect networks near, detect a connect and to what SSID etc. the device is connected, it can DIS-connect from Wifi, but as far as forcing a connect, don't think so.
There may be Java(script)(let) workarounds or more likely shell commands for rooted phones, but in stock Tasker Actions, I don't think it'll force a connect to a specified network.
Might be a Tasker plug-in for it though, or an app it can integrate with, even through AutoInput or something. Might want to check the Play Store for WiFi connect apps.
This Wifi Manager app seems to be the top dog. Whether it has native Tasker integration or not - I would bet using the AutoInput plugin, Tasker could bang its way through it and switch to the networks you want.

Has a "best network switcher" as widget ... But there is no automatic way of doing it :(

You could try a wifi manager app off the Play Store. I used this one for a while. Not amazing but it got the job done.
