So I googled the model number with "missing mobile data" and discovered that it's intentionally removed on these AT&T versions. I did find this app($1.48) which can make one for you though.

Package Disabler Pro actually has an option under the 3 dot menu called Disable All Bloatware.

It's not permanent though don't worry, if you want one of the apps back, just uncheck it, and it's immediately back on the device.

Go to Settings> Cloud and accounts> Backup and Resotre> Back up my data> Select what you want (Phone, Clock, Home Screen, Apps, Settings, Messages, Music, Voice Recorder, & Documents)> Backup Now. This will be the best way to backup your settings. If you want to back up all of your APK's I suggest Super Backup & Restore for your applications only. This WILL NOT save the data to individual apps. The application can backup your contacts, calendar, SMS, call logs & bookmarks but I have only used it to save APKs. I hope this helps. Firstly, I can help with one. You can disable the multi-view with MultiWindow Toggle for Samsung. It readds the toggle to your notification screen.

When sharing an image from a gallery, it prompts me to either send to an Existing Contact or new contact. So Samsung makes the first app chosen when opening a new file or link the default app automatically (one of the quirks I don't necessarily prefer, but I can live with), but then add this?
Cant share an image from gallery to someone not in contact list without adding them as a contact first. To get around you have to compose a new message in messages and then attach file.
When in the messenger, tapping the paperclip to select an image attach from your gallery automatically sends the message. You can only select "Send", there is no attach option. Composing text before attaching does nothing and the picture is sent and your text stays in the text box. ATT variant has a "done" option.
Opening a URL in messenger prompts you with a "the internet is scary" message warning you of URL dangers.
Caller ID contact images for outgoing or connected calls are tiny.
Five variants of the Note device, and the dialer is still locked in portrait mode.
If i"m doing something, incoming calls show up as a pop up card with a double ended arrow to expand it. I can live with it, but i'd prefer full screen.
PayPal fingerprint support gone (though not entirely Samsung's fault).
All of these things on their own are not problems. The inability to change or customer is. It feels like Apple assimilation to me. :(
Edit: Lack of always-on capacitive button lights were an annoyance I had, but I used Galaxy Button Lights to solve that.

Also, if you go in the phone settings > Device Maintenance > Storage > 3 dots menu > Storage Settings, you might have a large cached data number. You can clean that by clicking on that row.
This has been driving me crazy for years too. I might have found the fix, but time will tell if it comes back later or not. So far, it's been glitch-free for a few days for me.
I agree that it's a software issue and not a hardware issue; if you boot your phone in "safe mode", the problem goes away. It's some rogue process that is causing the glitch.
My theory is that the rogue process is "SoundAlive". The most effective way to kill this process is to stop it from starting when your phone boots up.
There are different apps that allow you to do that, including this app that I use. Install and open the app, scroll down to "Boot Speedup", tap on the "System Apps" tab, scroll down to find "SoundAlive", disable it, and restart your phone.
I have no idea why but when I use good lock, notifications will go through my headphones when they're plugged in. Once I go back to the stock system ui, notifications come out of speakers.

That's for the normal Android mode. I don't know what it is for the Gear VR, but I'm pretty sure it's 60Hz too. The Note 3 panel was capped at 60Hz (even though the Oculus DK2 boosted its refresh rate to 75Hz) and the Note 4 panel too.

In the settings there is something called 'Switch to best network'
There are apps that solve the blinding problem, like Twilight and CF.lumen which cut the blue tones at night, making the screen less harsh, and offer other automated or scheduled options, too, like specific brightness levels or activating whenever the surrounding light is under a certain brightness level, etc.
Smart Voice Recorder doesn't support multiwindow mode, but it does record from the notification bar and I've recorded multiple hours with no problem.
My solution? Install Nova Launcher and get a much more standard app drawer, dock, and home screen, with plenty of customization options.

AFAIK, not on the default camera app, but you might be able to try out an app on the Play Store that allows for manual camera controls. I've heard many people use this: https://play.google.com/store/apps/details?id=pl.vipek.camera2 It's a paid app though, so I don't know if you want to try it out, but you could always refund within 15min if it doesn't suit you.
The real question is whether or not the limit for 10 second exposure is limited by the camera app, or by the camera hardware.

I think this is a bug. My s6 edge on 5.1.1 had the option to choose Once or Always. For now, this app is a work around. You might like it even if the bug wasn't present.

Use a different keyboard. One of the major benefits of Android in general is the easy switching of keyboard. While iOS has added user installable keyboards recently the tech is far more mature on Android.

Not only does it have better auto-correct and prediction from the start but it learns how you talk very quickly and predictions become far more tailored.

It's not ideal, but I guess better than no answer. I did the second DIY one at this page. The author worries about having the home button and part of the camera controls blocked, but I found that taking pics in landscape solves the problem (derp). Then get whatever tripod you like.
I use DNS66 available through the F-Droid repository, it blocks just about all the things I want. I am not rooting mine since it would kill Samsung Pay. The flashlight widget is there in the drop down, but you have to swipe right to see them all. You can rearrange them if you please.
On Note 5 it seems we can't update every stock apk because of missing "secure boot" option. It's missing on mine, at least.
Anyway, you can go on APKMIRROR and look for Samsung apks. Download one of them and just install it as every other apk. You can try with Contacts, it needs a bit of trial and error to find the best version. Or with Gallery, latest working version should be 5.3.15.306 and now includes the "Hide Album" option. I installed it before update but it should be fine now too.

I have the international version and there isn't too much bloatware in comparison to carrier models. There are some apps you may not use though. I recommend buying a launcher that can hide the apps such as Nova Launcher Prime which is $5. You'll also be able to customize it to how you like and you can also apply icon packs with it. The headphones are ok but I prefer to use $6-7 Panasonic headphones from Amazon which are very popular.
Sorry. I'm a purely PC person. I haven't had to use one in a while, but I've had good experiences with getdataback. They also have a mac version from what I see. You do need a paid version to recover files though so you can always try looking for other free options.

As far as syncing contacts I would recommend using the cable that they gave you and just sync it directly from your phone.
You should also look up an app called isyncr since it would easily transfer your songs. I know they have a PC app, but unsure about apple version (I don't see why not). The only downside is the free version is extremely limited and you may need the paid one.
Got ya. Well, the back facing camera isn't under the glass casing, so it seems you wouldn't have to do all of that. There are a few replacement videos on youtube. You can take off the middle casing or try to tackle it without taking off the middle casing like this one .

All you need is a hair dryer to warm up the back of the phone and soften the glue that holds the back glass in place. Then you undo like 18 small screws and the phone comes apart so you can get at the battery. It seems hard, but honestly getting the back off is the hardest part. If you accidentally break the back glass (I did), you can get replacements on Amazon for like $10.

As for getting it professionally fixed... I personally wouldn't bother. The phone is over 3 years old, end of life and there are budget phones you could buy that offer better performance for under $200 these days like the Moto X4. You'd be better off buying one of those than spending $100 or whatever having someone swap the battery out for you.
Samsung flow won't work as it requires Bluetooth so I'll suggest using Join. Depending on the app you use you might even be able to answer directly from the work device.

I've been using these since I got the phone ~1.5 years ago. The case is grippy enough to not slip out of your hand but also slides in and out of a pocket easily.
Well its just a small phillips screwdriver, a small suction cup, heat gun, a thin metal prying tool and some business cards. Isesamos are a few bucks each online. The others can vary. Shouldn't be more than a few dollars. Batteries are like less than 10/15 online. Just make sure not to do the initial prying with the metal tool, cause you'll take off the color on the back glass and possibly crack it. That's what the business cards are for. I have the upright Samsung one on my desk at work. It is really nice for those days when I use half my battery before lunch. I can throw it on there, have quick access if I need it, and just put it back to charge some more. I tried it at home next to my bed, but the blue LED was really bright in a dark room. I have a different one at home that only keeps the light on for a few seconds when it starts charging. It is this one, but with different branding. Obviously some cheap thing that companies pick and and throw their own logo on.

I put a Skinomi TechSkin on mine because I didn't like the glass. It goes on clear with a slight orange peel texture and doesn't show fingerprints. I don't expect the film alone to protect the back from drop damage, but I use it with a bumper. Another Redditor shared their experience with it here.

It's pretty handy, I keep it on my keys with one of these. It's good if I want to have music/movies or roms for emulators on it since the note 5 doesn't have expandable storage. Also makes transferring files easy without having to email or upload to computer and then to another person.
I recently upgraded from a GS4 to the Note 5. I went with the 32GB version. While I never had a huge issue with touchwiz, I decided to try out something new with the new phone and went with the nova launcher and it is awesome. The phone is much snappier and the fingerprint scanner is great. While I can't really compare it directly with the S6 or S7, this phone is great. The S-Pen is great so far, it's better than writing on paper it works so well. As far as storage goes, I think the 32GB is plenty. I currently have all the apps I use, plus all of my text messages from my old phone and still have 18GB free. I also keep a flash drive on my keys for larger games/emulators/movies and haven't had any issues yet. If you need more specifics, a standard picture is about 3.5MB for me, and a selfie is about 1.5MB.
Gaming performance is great compared to the S4, the main game I play is called Crashlands, I used to have slowdowns when there was a lot on the screen at once, not anymore though. I can't really speak to the audio quality as it's not important to me.
Samsung Pay was easy to setup for me, but haven't really used it yet, although it is included in all of the phones you are considering.

Edit: I have the white and it looks tasteful on the nightstand. Very small, well made. The black accessories look a little to 1990s to me for some reason (Apple maybe?).

It should work fine for wireless fast charging, and the only real downside is that it has no cooling fan (which is probably unnecessary anyways, but not bad to have).
I have this one and I'm pretty happy with it.
It's quite thin despite the protection it gives. I really like the look and the feel of it as well. As to how well in does protection-wise, I couldn't tell you 100% BUT the phone feels very secure inside it and the air cushion technology used in it makes me think it'll be totally safe when/if I drop it.
I've always bought Spigen and almost every time I've been happy with it.
10/10 would recommend.
