That is not accurate. Proton mail also logs info, it's what they don't tell you they are logging that you take as fact of not existing. Protonmail actually turned over their logs in a court case not long ago. They are supposedly more ethical about it than my own secure mail provider who has on many occasions hacked clients accounts via request from courts.
The fallacy of VPN's being secure and anonymous was a point of contention for me when ADV China was pimping NordVPN. Nord had been compromised at least once and it was revealed in the tech community they were actually logging a lot more info than they claimed.
VPN's and secure email providers do log info, they have to in order to effectively function as a conduit of the internet (or intranet as the case may be).
It's up to the individuals running them or the companies as to how much they log, how much is retained, what they do with that information and how ethically they use it.
