You should probably be more worried about losing your phone and someone accessing it (because you didn't lock it in time) than some zero-day exploit orchestrated by China.

In any case, you probably want to do something like this in approximately the following order (stop at the point where you feel safe):

1. Buy a desktop computer for all secure operations.
2. Only put crypto on your phone that you are willing to lose (10% for example). The rest should be on a hardware device.
3. Use a password manager with complex unique passwords for each site.
4. Use TOTP 2FA wherever possible (not SMS).
5. Use a DNS blocking service (like NextDNS.io for example) to block trackers and intrusive telemetry.
6. Buy a de-googled (de-Huaweied) phone. You probably don't want to waste your time trying to flash a ROM yourself: search online and you will find reputable people selling these.
7. Use unique email addresses for each site you log into (using simplelogin.io, for example).
8. Contact your cell carrier and ask them to put a pin lock on your account for potential sim swap attacks. This may or may not be possible.
9. Try to close any accounts that require a cell phone number (i.e., google) and that could be affected by a sim swap attack.
10. Get rid of your cell phone.

I don't understand what you mean with "set address". The ledger device will derive the flare address from your device seed, like all accounts. You cannot manually set or import a non-ledger address, that would defeat the purpose of the hardware wallet.
