There's nothing wrong with this, it's completely normal for a phone to reach 40° after heavy tasks like multiple consecutive restarts.

There are different standards of fast charging, so it may be hard for the app to detect it.
If you want you can download Ampere to monitor your charging, with 25W fast charging you should get about 4000mA.
It will monitor your charging cycles and, over time, will give you an estimate on your battery wear. The more you use it, the more accurate it gets.
I personally use Gsam, I think its world's better than accu whatever that is being shown here. Just gives you plain stats of screen on time and percentage of battery use along with percentages of things like, WiFi or Bluetooth use and how much those used up your battery as well.

I don't believe it does at all. My reason for turning it off was because I wanted to see if there was any truth to the Pixel rumour that having it off makes scrolling smoother. I am undecided.
If you leave it off but still want accurate tracking you could try using an app like Gsam battery monitor https://play.google.com/store/apps/details?id=com.gsamlabs.bbm I used to use this a lot on my previous phone.
The battery consumption is almost negligent when you lower the resolution, each pixel still needs to be lit regardless of the resolution, it's just that with higher resolution there's a bit more processing involved. A 5% in battery saving is already too much.

I used to use accubattery, but I feel like it actually does more harm than good. I really like GSam because it just says what the battery is being used by, and that way I can work with that. I could be wrong about accubattery but I had it when I first got my A70 and it wanted to tell me that I started with 4000mah, which felt wrong.
