No idea regarding a book, but if you're cutting things out to use as samples, why not use the computer and print screenshots? You can get a lot of those from here.
Just upgraded my work monitor, to this! Bang for the buck is out of this world and create colour correction. Strongly advise you put one of these forward. And shop around a bit, some places have this screen on offer for £200 less

There’s the paper textures, if you need any other free resources like fonts, courses, free png or vector files, free ways to remove backgrounds automatically, templates, animations, etc.. I can provide links to some really good resources. Freepik is great btw, Freeject is a little known secret. I’ve never heard anybody else talk about it and they have loads of useful things!

I've had very good luck with the Adobe "classroom in a book' series. They provide all the assets and have step by step guide tutorials to learn the software... recently completed the After Effects book to learn animation and was very pleased.
