The anime portrays volumes 1 - 7, except volume 5. (Volume 5 is basically like a collection of OVAs). So, if you want to continue, read volume 8, it picks up exactly where the anime left off with Maya requesting a meeting with the siblings.

From the way it sounded in the article made most of us fans think he was talking about some kind of Mahouka related LN series after this one is finished. Whether its a continuation, or Tatsuya & Miyuki's time in University, or some kind of side story. But, I guess he could have been referring to the new anime season, but imo I don't think Satou is talking about the new anime season when he mentions a "new development" after the LN series is completed.

The novels have a lot of information about how the magic works, so those parts can easily take a large portion of the text.
The Vols 01 and 02 are the Enrollment Arc, if you look at the name of the episodes on Crunchyroll (https://www.crunchyroll.com/the-irregular-at-magic-high-school) you'll notice that there are 7 episodes about that arc.
If you rewatch the whole anime you can start from Vol 08, you should be able to figure out what's going on for the most part.
IMO the secret to not losing track of the story is to write some stuff down as you read it. I personally create notepad files to keep track of the mangas / novels I'm reading, so I can easily CTRL+F to find stuff I don't remember.
I usually write down the characters full name, a quick visual description and some key information about them, for example:

That one is from SwordArtOnline, but I do the same thing for all the stuff I read, it really helps when you gotta wait a few months for the next novel to be translated.
Some parts of the novels are going to be amazing and you'll easily read through them while not writting anything down, so just try to remember to do it, it'll pay off in the long run.
