I assume those are speaker level outputs with just TS connectors. You’ll need some sort of converter and you’ll need to either make custom TS plugs or just buy a mono 3.5mm to 3.5mm cable and cut it in half and use its wires to directly connect to a converter.

Here are my 2 cents... phone is a decent way to get a reading below 90dB. What exactly are you doing that you're concerned about? The easiest thing to do is just to get flat response ear plugs - it's just going to turn down the volume on everything, but you'll still hear like normal. Use your phone to get a general baseline, but I get erring on the side of caution. Figure out about what sounds like it's not good for you, pop in your ear plugs, don't stress it.
These are all really great suggestions! We do have a PA and an OK (not great) speaker system setup, so we're good on that end. I think we are def going to go with the Sony PXW-Z150.
I do have a question about the streaming equipment however. I did use this in the past, but with a multicamera setup I'm wondering if this will work. We are also looking into this Roland piece for the switcher which will remove the need for an audio mixer. All of this will be connected to a Macbook Pro and run on OBS to livestream. I might be way off base though lol.
I would get a Chromebox for that purpose (https://www.amazon.com/CHROMEBOX-3-N017U-Intel-Celeron-Graphics/dp/B07CLQZHF9/) and put it in the lectern with a small preview monitor, keyboard, mouse, and USB extender that users can plug into. It will let you open most file types and get to web pages, but since it's on the Chrome image, it'll be far less susceptible to viruses and need less upkeep.
You know, I didn't see any summing boxes with phantom power but I did see one or two that say "allow phantom power from source".

We've got four of these. They work great. One word of caution the output is exactly 60 fps NOT 59.94. Your monitor won't care but if you try to feed something that needs 59.94 you are out of luck.
VGA as a standard Needs 5 of the pins to transmit video. Most of the pins are unused while some are use for sleep functions and other thing like that. You could use this cable without the BNC connectors. To hook it up to you monitor.
