I like the open style lower charcoal grates like this. It does not get clogged like the original can, but the best part is it transforms the entire egg into a charcoal chimney and it can then be easily lit from below. After I oil my cooking grates, I put the oily paper towel in the space where the ash falls behind the lower air vent and light it. Easiest egg lighting ever.
Speaking of cooking grates, this is the one I settled on after trying cast iron and grillgrates. It’s expensive but it is incredibly high quality and has enough thermal mass to create perfect grill marks. It’s also hinged so you don’t have to lift it out to add fuel (which would be annoying because it weighs 15 lbs).
I’ve seen one at a local Ace Hardware in Atlanta. Here’s a replica on Amazon though. BTW, the new regulator works just fine putting out fires.

The BGE comes with (or at least used to) ceramic “feet” that were intended to be used to keep the bottom of the egg raised off the flat surface of whatever it was placed on. I think most people buy the Nest these days and I never used mine for anything.
I've used a Porter Cable Heat Gun for years. Not very expensive and they last quite a while. You can even turn it to a colder setting and stick it in the bottom vent to add some ventilation to get the charcoal going.

Couple great tips for you, and ones that I was given when I started doing wings. Paying it forward!
It’s a pain, but separating the drumettes from the flats helps em cook more evenly and are easier to toss around and rotate around the egg, especially when you have limited space (and you got to since the back of the egg often gets hotter than the front). Pigtail flippers are the perfect tool for wings on the egg.
Probes are also going to be more trouble than they’re worth with wings. Too little meat, too close to bone, and a spider web of wire to work around when flipping. If you’re not sure of the internal temp, a thin instant read probe works much better. This one is my go-to thermometer for anytime I want to check I.T. - this pocket sized gauge is so much easier than busting out wires and transmitters! Only $25!

what are the dimeensions of your table?i have a 60" table with the egg offset to one end. Ive had amazing luck with the Ravena covers from Amazon. I have one over my egg/table and one over our propane fire pit and they last a couple of years in the georgia sun before needing to be replaced.

I think this setup is key- indirect with legs up, then grate, then pizza stone. That allows the hot heat to circulate up to the top without getting the bottom too burnt. Also using corn meal or semolina on the bottom to prevent sticking helps.
I've used an alternative method that is decent if you don't have a stone. Get the copper mats (here) and setup indirect cooking, legs down. I place my pizza on one of these mats and it helps with cooking the bottom as well as movement of the pizza. They've turned out very well for thinner crust pizzas, I just cooked 6 last week for my sister-in-law's boyfriends birthday, and everyone raved about them. Just used Publix dough as well.
Where you’ll notice the difference is on long low & slow cooks. Temperature control is much easier with the gasket in place, and you get more hours out of the same volume of lump.

My husband bought me one of these and I tried out lat week. It has a good range and clips for the grill for ambient temp. It's also programmable and doesn't require an app on your phone. A plus for me.
The regular price for the BJIII classic seems to be ~2000.
If you got the big joe III for that then that's definitely a great price.

Welding gloves are soft and soak juice, these work the same but you can rinse your hands in the sink for cleanliness.

I use this regularly, the tool does a pretty good job of getting the ash out in that space. Then about once a year I take the firebox out and give it a good sweeping.
At my last place, I had a deck around that size and it could get cramped pretty quickly with a chairs and a table. I'd suggest collapsible shelves and possibly a grill/bar cart. That gives you a couple different configurations, storage and that'd probably let you keep the seating you want.
I use two of these and a regular lighter. Lid open and all vents open for the first few minutes then close the lid. Works like a charm.

Have used it so far for the chicken and also done a couple of al pastor's with chunks of pork butt which worked great. The taller skewer sits comfortably in my large BGE... haven't had a reason to use the shorter skewer yet.

I got this mainly for ribs. Was able to fit 4 x full rack of St. Louis cut ribs with just trimming off the last 2-3 ribs of each rack. I put two on the bottom and two up top. The ones on top of the rack cook a little slower so I swapped them half way through the cook. The rack is very sturdy and the BGE closes perfectly with the rack inside. I give this five stars!

I use something like this. Flip so the arch points up and then lay the brisket across. It allows you to get a larger brisket in a better position so it isn’t directly over the flame. Not completely fool proof but certainly helps.

Thanks! I think I'm gonna try that next time to see if anything changes - my brother does his that way too. A book I got right before getting the grill recommended the way shown - legs down on plate setter, pizza stone directly on top - so that's how I've done it first few times.
I've only ran with the mostly stock setup for years, so I cannot comment on CGS stuff, other than I always hear great reviews, but this is what you want for easily removing the platesetter for reverse searing. Easily one of the cheapest and most useful things you can get for your egg.
Definitely look into getting a propane camping stove so you can boil water or make it easier to use a pan. We didn't have a stove, oven, or hot water heater for three weeks when we moved because gas lines were being installed throughout the house. Egging, much like any hobby is so subjective to the person. Rather than trying to guess what they would want for their style of using the Egg, get them a gift card to the Ceramic Grill Store website. There are so many options there, and they can get something that they will use and will complement their usage of the Egg.
That being said, the one accessory I use more than any other is this little $20 tool for lifting out a hot platesetter/convEggtor.

This is similar to what I use. Mine usually runs for a couple hours between pellet refills, might be the 8" version. Works great for cold smoking. Regular smoking is done via conventional means (lump and wood chunks).

I got one of these Flame Boss temp controlled fansand never had that problem again. It’s fantastic, it pretty much maintains temp until the charcoal is gone. I don’t get up in the night anymore, just check it when I get up.

Guage size is thick and seems solid. I've had it for a year now with no issue, I cook regularly. It fits nicely into the large size egg. I keep the bottom CI plate under the basket. I clean my egg before every use and do not get any airflow problems. I was getting serious airflow problems before the basket and this helped resolve that issue. It makes cleaning/prepping the egg soooo much easier. I'm convinced, I will never own an egg without a basket.

Keep it covered to keep as much moisture out as possible and avoid the dreaded freeze-shut. Also, moisture, extreme cold and extreme heat equals potential of cracking something. I bought this to cover it. Works great! only fire Kamado cover
I originally used a charcoal chimney but never really had a consistent temperature with it. I bought a cheep electric charcoal lighter I used for years reliably and it naturally lit the coals in the middle. When my charcoal lighter tried burning my house down by shorting out the outlet I started using a map torch and had good luck just lighting a few spots on top. Now I have this thing

So, first thing is I should probably rephrase. It's not impossible, just not as easy. I can still sort of get some coals to pour out, but I started just reaching in with a gloved-hand to pull pieces out while I had the caddy tipped to pour into the grill.

For my last cook I just took the lid off altogether instead of using the flip-door and it poured fairly well, basically it just made that a little more complicated.
I have this lying around and like it. Torch. For “fire starters” a paper towel or 2 soaked in a bit of cooking oil is about as as cheap as you can get, and works well.

What ever knife you get, find a good sharpening stone and learn how to use it. You dont need to go crazy with 5 stones so you can perfectly slice paper. Just get it sharp.

Maintinance is important here too. Keep it oiled. You dont nees anything expensive. Get mineral oil from the laxative section of a Walmart or Target and use that regularly on the wood. A bottle is $5 and last a couple years for me.

Yep, I pulled them and put them on a cooling rack sitting on a sheet pan that I’d kept in the fridge. I opened the bottom vent all the way, and took off the cap. Then I blew through the vent opening with my pocket bellows. Took less than 10 minutes.

I hate to be be the Picanha police but apparently thats what I do now. It looks good, but if you want more accurate Picanha and not just grilled sirloin, you need to cut the roast into strips, put it on a skewer and on a rotisserie. The only seasoning is salt. This article has good examples. You can simulate the rotisserie with skewers and by just flipping it often, but if you get long skewers like these at a local Brazilian market or Amazon, you can lay them across the top of the egg and rotate them by hand. Or get a joetisserie if you have the money.

I know you bought the minimax to travel with but you might consider getting a webber jumbo joe for that purpose. Lighter, cools down fast, integrated handle. I have one and love it. Same size as a large egg too.

I highly recommend a cast iron grate for the Egg—especially if you’re cooking nice cuts of meat like this. Here’s one that’s a bit less expensive that the BGE branded one.

That’s a good idea. My peel is wood so I’ll keep that for it’s original purpose. But I do have one of those big spatulas that’s like 8-9” wide. I need to get it out of the garage and keep it near the grills.
