Gotcha, I will note I am not a lawyer, but the fact that I found 100's of sites saying its valid, and not one saying it's not, I think you're good. If you got to choose fax would be better, but both seem good/valid.

I had actually thought about having a separate Gmail account, to which I would send my documents. This way, I could not temper with the documents' time stamp. However, I could still delete them.

To protect getting paid write up a specific Web Design Contract with a clear Statement of Work. Here’s a decent primer on that stuff. watermark puts the copier factory on notice that this image was taken from somewhere else and denies them the ability to say we dont know where this came from. if you have a blurb on it in the middle / scattered around with the watermark saying unlicensed drawing or something similar it is even better since it would put the copying factory on notice that it is an unlicensed design. at the very least they wouldnt be able to claim they didnt know it was not licensed when they produced it.

Depending on the size of the camera, you could put it inside one of these and put a padlock on it. But he could still just smash it. However, if you have permission from the landlord/property owner that could be considered destruction of property and get the police involved.

Take a photo log of temperatures. This may help drive your point in court if it comes to that.
They probably can technically recover the files easily. But, they're a realty office and not an IT office. I'd recover it in 10 minutes if I knew the drive directory to your personal server. They could hire an IT contractor to come take care of it but probably don't know that they can even be recovered.
At this point I'd just play dumb with them. Ignore the first letter and see if they just let it go. If they send another one then maybe respond and say that "I'm not sure which files you're referring to. Could you be more specific?" Maybe add something like, "I've had a hard drive crash and lost most of what I had on my laptop, including family photos, etc." This is just to blow smoke up their ass and make them think they're wasting their time with you. And, if push comes to shove buy an old laptop on CL for $100 and remove the hard drive. Put it in a small box without bubble wrap or any protection, and chuck the box against a brick or concrete wall super hard about 20 times. That'll destroy the hard drive. Then, you could offer the hard drive to them and say, "if you can fix it you can take what you want. But, please let me have my family photos."
Also, run a shredding program on the hard drive before you remove and erase it.
This will make them show their hand as to whether they know something or just are conducting a fishing expedition (likely the latter).

You lost me here. Either she paid for and had her record expunged or she didn't. Usually when the DA gets involved in a deal like this they tell you that you have to pay for the expungement to get that shit off your record.
