I had something similar happen to me. I read up about what to do (I wish I could find the post) but it said to send them a letter stating the following: 1- tell them that you are being harassed and you want it to stop immediately. 2- you understand what they want (so they no longer need to contact you), 3- you are disputing the charge (you understand and are responding to the allegation) 4- if they want to pursue this further, they can take you to small claims court. 5- Tell them that you do not wish to be contacted further about this matter so any calls, mail, email or in person inquiries will be considered harassment.
After I sent a similar letter to the collections agency that was after me, I never heard anything from them again and was never taken to small claims court.

Installing a call blocking app would probably help you too. Blacklist Blocker or Should I Answer are good ones that don't sell your data.
I'm not the person you asked, but have a look at something like Harvest, which is free to use to track your hours per day against a specific project and/or task and can be used to generate invoices as well. I used this at the free level for awhile before deciding to upgrade to a paid version ($12US/month) when I had more projects to track than the free version allowed. You have the choice of writing in your hours against specified tasks (which is what I do), or you can turn it on when you start a task and off when you stop, so that it tracks the actual timing.

If you have a city water system, the inlet to your house is at least ¾" pipe for adequate flow. What's likely happened is this was formally a single family house split into four different units with more bathrooms. The lowest shower comes right off the ¾" pipe and then the other showers are sharing a ½" pipe split three ways. If the pump solution doesn't work it might be a major plumbing job to upgrade the pipes to all the bathrooms to ¾" size and that's hoping the municipal water pressure coming to your house is great enough to handle four showers at once. And if in the end this all works with good pressure you may find that everyone is running out of hot water if the tank isn't big enough, or could use a tankless heater with gas (heats it as fast as it uses it, never run out).
Get one of these in the meantime, atleast for while your home. If you can set up a surveillance inside and out, do it asap

Depending on where you work, you may have access to an Employee Assistance Plan (EAP).
These often have access to free counseling. This is useful for two reasons. The counseling will give you emotional support which you need, and they will have people who can advise you on your legal options.
If you don't have access to an EAP, contact a local church that might have a counselor on staff. As a pastor, I deal with situations like these regularly. People come for support and counsel when they are in trouble. Be careful with the church though. There is no standard or certification that is common across all churches. You may find exactly what you need, or you may find counsel not much different than the mixed bag of reddit advice.
On the legal side, many are suggesting that divorce is a likely outcome. I don't think that this is a foregone conclusion. Even if it is not, it is wise for you to have evidence saved for the day her mental health breaks, and she makes accusations against you. I would suggest an audio / video surveillance system that records at least a weeks worth of video/audio with timestamps.

I think NordVPN is not the best one. I use ExpressVPN and it is on the expensive software side. I do check as well my ip on ipleak site. Ideally you want to use as well another company proxy server. In this case the chances of finding you would be so minimal. There are already cases where Canadians have been properly identified and served documents. So extra caution is required.
You aren't using it correctly then.
A VPN effectively tunnels you from your PC to an external VPN server. From an outside connection it looks like your IP address is that of the VPN server. All the routing info coming from Teksavvy's network is stripped away along with the VPN encapsulation.
For them to have filed a copyright claim against you with Teksavvy, they'd have to have known you were a customer, normally by seeing your IP address (which would be registered within Teksavvy's scope). This would imply that either your VPN wasn't active, there were VPN passthroughs active, or that NordVPN kept logs of who was connected to what VPN address and turned that over to the copyright claimant (unlikely they would do that without putting up a stiff legal resistance).

Quick few questions:
(1) Do you share a kitchen? (2) When you originally moved in, did the LL live in the space at the time? If for example you moved in and the LL did not live in the space at the time, you may be able to submit to the LTB and claim tenancy (RTA stipulates that to be a boarder and not covered by the RTA, the shared kitchen had to have been in place before you moved in.)
Given you're likely not covered by the RTA unfortunately you're rather limited in terms of legal options that could both deter these actions and provide you some sort of relief.
