Try Daily Info or Gumtree, there will probably be a lot of temporary Christmas jobs around the town centre too.
OSM map suggests there are a couple of paths that would work, but I can't vouch for them myself / whether they're rights of way.

You could try parking at St Clement's Car Park, and if Angel & Greyhound Meadow is open (pedestrian gate and bridge at bottom of car park, turn left once you're over the bridge) you could do worse than to witness it from there. It's the green area that you can see on the North side as you cross the bridge.
You could get as good a view/listen from there as you would from the bridge, and it's going to be less crowded.
Parking at the Oxford Hospital sites is extremely limited IIRC. If you can extract a parking permit out of the University it will cost you 1.5% of your annual pay. “Poor public transport” is not acceptable as a reason for requesting a permit unfortunately!
www.openstreetmap.org says Water Eaton <-> Old Road campus by bicycle is 8.5km. You can cycle that in less than half an hour easily. A regular commuting cyclist would probably take 20 minutes or so.
Bicester to Old Rd is 23km, which is going to take an hour or more. You’d get very fit doing 2 hours of cycling a day!
My guess would be that once you’ve faffed about waiting for the train, the time to commute will work out roughly equivalent whatever route you choose. You could try cycling once a week and see how it goes?
There are a few 'domestic' parking places around where homeowners allow you to park in their garden/garage/driveway that might be useful. Some on gumtree, but not as cheap as P&R. There may be more advertised in other places (daily info, oxford mail, free papers..etc)

Oxford Tube - if you get on at Victoria you are guaranteed a seat on the first coach that pulls up but it will take a good solid 45 minutes to get out of Central London before you hit the motorway
Getting on at Marble Arch is my preferred choice. You usually get a seat and if you dont, a new coach will arrive within 15 minutes. Then its a bit easier getting out of London. In total 90 minutes
If you have a lot of money and need to get to Oxford FAST, use the https://www.thetrainline.com/ to buy a ticket from Paddington to Oxford. Takes 50 minutes
Hey friend! Shotover is a pretty big park with multiple paths going in all directions with a bunch of crossovers away from any main roads. I can sort of picture where you was heading but like I said it's huge and I wouldn't want to send you towards that road you're trying to avoid.
Here's a link to all trails. It's a trail map app and has all the paths across Shotover and more, unfortunately no contour lines so you'll have to take elevation in to account.
If you realllly don't want to download anything or sign up to the app I'm pretty sure they have a big map in the main carpark that you can take a picture of.

Lots of people joined the group - that doesn't seem to be a problem with meetup.com - but no one came to events.

Perhaps it wasn't focused etc enough. One of the reasons I set it up was because I wanted to get into this stuff but didn't know how - but that meant that events were pretty much limited to 'meet up in pub with folk music'?
Well, I tried to create a folklore meetup.com meetup a few years ago, with the hopes of exploring some of this sort of stuff (Nor exactly witchcraft, but folklore, stories, the old ways etc etc).

Anyway, it was a complete failure.
So I like the roads to the northeast, beyond Marston. It's also nice to get out beyond Shotover Hill, though you have to walk over the top.
Unless you're going for quite a long outing, it's probably a good idea to bus or train out somewhere. Haven't done this myself.
