The best way to watch NFL games is to buy a VPN like Astrill (I can send referral link). Use Taiwan server and buy the international NFL gamepass. The VPN is about 120 USD for the year and the gamepass in Taiwan is 125 USD. All games can be watched live and on-demand and the library of original content is huge. Based on OPs post, the content you have access to seems like a lot more with the international gamepass. Highly recommend.
